Our newest how-to video shows you how to make an Apple Cranberry Crisp in a Dutch Oven. Remarkably simple. The recipe includes my tips on which varieties of apples to use (the ones on the harder side are best). It can be easily adapted to work with a myriad of fruits.

The Dutch oven is yet another use of an incredibly versatile tool of any backyard barbecuer.

The recipe can also be cooked without a Dutch Oven, on the indirect side of a 2-zone grill setup. Read the simple modification in the sidebar on the right of this article.

This four-ingredient recipe is a wonderful starter for the aspiring chocolatier. My instructions on making Lusty Chocolate Truffles begin with a Black Raspberry seedless jam as the main flavoring. Master this recipe and you'll soon be able to make your own box of assorted chocolates. I've listed ideas for mixing in other flavors with the chocolates and coatings to decorate and add another layer of complexity to the truffle. The possibilities are endless.

Never cooked with chocolate before? Read my article, Zen of Chocolate, to get a quick primer on this Valentine's Day ingredient. The article includes types of chocolate and their differences, how chocolate is made, and how to melt chocolate properly -- and avoid costly mistakes!

Traditional pastrami is made from brisket - a naturally tough, stringy, fatty and cheap cut of meat. Therefore the six-step process to making Close to Katz's homemade pastrami and transform it into Chosen People-level barbecue glory is one of the most time-intensive and complicated of all the recipes on the entire site. But done correctly, the wait is worth it.

Making homemade corned beef is your first step. (Keep this one on file for St. Patrick's Day!) But even before you get to my corned beef recipe, please study my article, The Science of Curing Meats Safely, to understand fully the how's and why's of curing bacon, ham, or pastrami at home. You'll read about the three types of curing methods and which one I prefer, as well as the ingredients you'll need for a successful homemade cured meat.

Want to try a barbecue blend from the South and Southern hemisphere? This Chocolate Chili Barbecue Sauce, inspired by Chef Ciaran Duffy, is all at once Floridian in its oranges; Mexican, with its chocolate and vanilla components; South and Central American, in its tomatoes and chiles.

Intrigued? Try my Chocolate Chile Barbecue Sauce here. I liked this best with pork ribs, not beef. Let me know what else you think this sauce pairs well with in the comments!

That little bit of sweet, semi-sweet, or unsweetened dark chocolate gives my Texas Chili Con Carne recipe a little something something special. As you read the ingredients and the notes just before the cooking procedure, you'll see I had to justify about every single choice I made. Texas Chili recipes are like that: defend your choices.

Sidebar on this article includes my play-by-play of one time I judged a Texas chili cookoff. I don't have a very high tolerance for heat, so watch out for the punchline.
Breakfast in bed for your sweetie? Include Candied Bacon (right slices), Toffee Bacon (left slices), or Mud Pigs (bacon dipped in chocolate, not pictured).

If you want to go the extra mile, try your hand at making your own homemade bacon. Nothing says love like bacon.
A gas grill you could love. Napoleon offers a great selection of beautiful gas and charcoal grills that are well made with useful features. The Prestige P500RSIB comes loaded with four 12,000 BTU main burners, an 18,000 BTU rotisserie back burner, spit and kit included, and a powerful ceramic sear burner capable of hitting 1000°F. Each burner has its own electronic ignition. Lots of high quality stainless steel all the way around including Napoleon's characteristic wavy grate rods. A cool optional cast iron charcoal tray fits inside the firebox to turn Prestige into a dual fuel grill.

Our review of the Napoleon Prestige P500RSIB includes a list of components and a list of key guidelines. Scroll to the bottom of our review page to check out reader comments for this venerable vintage machine.
