Thank you for being a part of this great community of grillmasters, pitmasters and home cooks. At holiday time, with food so central to our celebrations, I always try to put out a great spread, but I always remember, it's not what's on the plates, but who's in the chairs that matters most!
As usual, if you have cooking questions on Christmas Day, I can be reached through the comments on the bottom of any page from early in the morning Central time until about 2 p.m.

The festival of lights often calls for brisket, but why not make the ultimate Jewish brisket - our Close to Katz's Pastrami recipe, then the Rockin' Reuben recipe. You can do it easily by starting with a good corned beef, or you do it the eight day method by starting with a brisket. |

Let Maverick ET-732 Redi-Check watch the food while you watch the game and entertain friends. This affordable dual-probe, remote thermometer will monitor both cooking and food temperatures. Probes plug into a transmitter that sends the temperature of your grill and internal food temperature to a receiver up to 300 feet away. Even though Maverick has introduced new models, the ET-732 remains our fave. Read our review.
Franklin Barbecue in Austin is widely considered the best in the world and people stand in line for hours to get in. Within these pages, Franklin shares his secrets for building and maintaining a fire that produces clean smoke, and how to prepare the classic meats of the Texas barbecue canon. Read our review.
You might easily pass by this unassuming Broil-Mate 165154 LP Gas Grill in favor of a shiny model made with cheap materials and loaded with bells and whistles. If you're watching your pennies, however, this low cost gas grill is short on looks but long on value and carries a lifetime warranty on the aluminum body. Read our review.

Boozy Fun: Glögg & SoCo Cider
| |
Glug, glug, glögg! Crush a cup of cheer with family, friends, and this Swedish spiced wine in your glasses, served hot. With cardamom, cloves, port and brandy, glögg is a great treat next to the fireplace, and can even be used as a marinade for beef and venison (if you can part with any of it!). After straining them out, the raisins and almonds can be set aside for another use: raisins in a panettone, as Mrs. Meathead does; and roast off the almonds for a snack!
And if you don't have port or brandy around the liquor cabinet, have no fear! When the holidays have you ho-hum, try my Southern Comfort Cider. Similar to a buttered rum, this warm spiced liquor with Southern Comfort will warm up those winter nights. |
Mrs. Meathead's Foolproof All-Purpose Pie Dough
| |
The great woman behind this manis still a better cook than me. In time for baking season, she shares with us her Foolproof All Purpose Dough recipe. It's great for everything from apple pies to turkey pot pies.

Equipment Insight: Green Mountain Davy Crockett Portable Pellet Smoker by Max Good, Keeper of the Flame at AmazingRibs.com
| |
We believe Green Mountain's Davy Crockett
is the best portable pellet smoker currently on the market.
Surprisingly, most of the portables out there still have an antiquated Lo-Med-Hi controller while Davy Crockett employs Green Mountain's advanced digital touchpad controller with an integrated meat thermometer that lets you check internal meat temp with the flick of a switch. Adapters to run the electronics from your car battery or cigarette lighter are included. And Green Mountain is aggressively, (read: price cut!), promoting their WiFi capabilities which enable you to monitor Davy Crockett from your smartphone or laptop. AND unlike many other pellets that are stuck in the smoking and roasting temp range, Davy Crocket can hit temps of 550° for sizzling burgers and steaks.
Great for camping, tailgating, small capacity and condo cooking, some owners use them as an auxiliary device when their full size machines aren't necessary.
