Here's a menu of fun foods for eating off the coffee table, many of which can be cooked indoors if you don't want to fight the cold weather (but they are better on the grill or smoker). Let's begin with two dishes closely identified with Sunday's combatants: Boston Baked Beans. It was in Boston that the notion of mixing beans with molasses was conceived and still reaches the peak of perfection.
Seattle Smoked Salmon. No fish is more grill or smoker friendly than salmon. Long before Europeans set foot in North America, Native Americans on Puget Sound practically subsisted on salmon. This recipe creates an elegant, delicate, moist piece of meat with a hint of sweet, salt, and garlic.

Take your pick from these tested and beloved recipes: Last Meal Ribs, Best Indoor Oven Baked Ribs, Stovetop Mexican Ribs With Rice, Better than McRib Sandwich, Rendezvous Ribs in a Hurry, Vermont Pig Candy, Chinatown Char Siu Ribs, Hoisinful Nine Dragon Ribs, Chinese Five Spice Riblets, Cabin Fever Slow Cooker Ribs, and Tuscan Marinated Ribs. Smoked, roasted, candied, and spiced nuts. Here's a dozen nut recipes. Serve them straight or mix them with dried fruits, pretzels, or Chex mix. Melissa Cookston's Grilled Bacon Wrapped Stuffed Shrimp. Cookston won the 2012 Kingsford Invitational, the true barbecue world championship. This was one of her entries. Mussels Mariniere. Mussels are best in the cool months. This classic recipe is from South France is so easy. Not An Elitist Jerk Beef Jerky. Like BLT sammies? Bench the bacon and play the jerky. Many things bacon can do, jerky can do too. Blasphemy Buffalo Chicken Wings On The Grill. The original Buffalo Wings were deep fried, but I love the flavor and convenience of cooking them on the grill. And there is much less mess. Pimento Cheese Spreads. Traditionally it is spread on white bread and that's all. But it is also great on toast points, sliced French bread, garlic bread, and of course, crackers. Make grilled cheese sammies with it all by itself or add lettuce, tomato, and/or fresh basil. Use it to stuff cherry tomatoes as a snack, or a whole tomato as an appetizer. Stuff celery with it. Dip carrots into it. Add it to grits, omelets, or scrambled eggs. Slather it on top of chili dogs or on burgers instead of sliced cheese (oh my!). Here are three variations on the theme. Home-made Boursin Cheese Spread. Boursin is a spreadable cow's milk cream cheese flavored with garlic, black pepper, and herbs. It's great as a spread on a crusty baguette or on crackers or stuffed into jalapeņo poppers.

Authentic Baltimore Pit Beef. Pit beef is served in many restaurants, bars, and pubs in the Charm City area, and surprisingly, it is rarely found outside Maryland. It is essentially a juicy roast beef sammich cooked on a grill. But there are tricks to amp it up. Binghamton Spiedies. Better than shish kebabs, spiedies are popular backyard and tailgate food in Upstate New York, and for the life of me, I cannot understand why they have not spread beyond. They make killer sandwiches. Hamburger Heaven. Everything you ever needed to know about burgers, buns, and condiments. Hot Doggerel. Everything you ever needed to know about frankfurters, and how to style them. Perfect Pulled Pork. Succulent, juicy, smoky, seductive, and a whole bunch of fun things to do with it. Brat Tub. A classic football season tailgate dish with a twist. BBQ Shrimp Po-Boys. BBQ shrimp in New Orleans is cooked in a pan! We grill it, add some andouille sausage, and make a killer po-boy sandwich. Mayo Mojo Egg Salad. Amp up garden variety hard boiled eggs with a little Mojo Mayo.

Chili

Chili Con Carne. If ever there was a food whose definition could bring otherwise genial people to fisticuffs, chili is it. Like barbecue, everyone seems to have a definition for what it is and what it isn't. I went Texas with this one, so there are no beans. But it could still get me shot. Why? It starts with smoked chuck. Cincinnatti Chili. This is the one with ground beef and beans and it makes a heckuva chili dog.

How We Test Thermometers
| |
Bill McGrath is our Thermometer Maven and he recently made an interesting video on how he tests thermometers for us. As I hope you know, we have a searchable database of his test results, ratings, and reviews of well more than 100 devices. There is nothing like it in the world, and if you want to be sure not to wast money by overcooking food or send your guests to the hospital by undercooking it, you should check his guide and stock up. Here's a link to the database, and here's his video.
