March Madness!  


 

Yes indeed!  Kicked off the month in Dallas (where they love women with big hair and big jewelry:-)  Trained all the Vistage Dallas Chairs, and rumor had it I was in town so enjoyed a impromptu lunch with all the "power women of NSA" (National Speakers Assn.

And that led into my Dallas Speakers School where I enjoyed a dinner out with some of the attendees

Left right from there to meet up with my Vistage CEO group and spouses in Napa for our annual retreat. Fantastic weekend, great speaker, Brett Pyle, wine tours, dinners, a fun scavenger hunt and lots of bonding and camaraderie.

With a one day turn around, I packed for my two week vacation with BFF Chris Leach from Wales. We always start in South Beach for a whirlwind shopping spree before boarding our annual cruise. Seeing this mobile synagogue at Lincoln Road Mall was a first anywhere.

 Stayed at  boutique hotel Vintro, you can tell by lobby sign how fun and funky it was!

to tour the western Caribbean for 10 days to some places I'd never been...Guatemala, Belize City, Costa Maya and more. Surprise gift in Roatan in Honduras from Speakers School attendee, Jill Frey whose family has homes and coffee plantations there. She had her wonderful driver Omar take us on a private island tour all day...highlight of the trip with a stop at a store he thought we'd like. Divas... see photo below.

Got back each night to enjoy these amazing sunsets from our veranda.  

It was a great time with a great friend.

but when you go on a cruise, you go on as a passenger, come home as cargo... as in tempting desserts.

Hope the luck of the Irish was with you all month and continues into the Spring!

That was the name of one of my businesses and oh, come on,

I know guys cook, too.


10  servings 
 
  • 2 cups all-purpose flour
  • � cup light brown sugar
  • 2 and � teaspoons baking powder
  • � teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter, frozen and shredded
  • � cup Silk Almond Coconut Blend Milk
  • � cup Silk Almondmilk Protein + Fiber
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and � cup butterscotch chips

Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silicon baking mat. Set aside.

In a large mixing bowl, mix together the flour, light brown sugar, and baking soda. Grate the frozen butter (I used a boxed grater, a food processor also works). Add the grated butter into the flour mixture and combine it with a pastry cutter or your hands. Set aside.

In a small bowl, whisk together both of the almond milks, the egg, and vanilla extract. Drizzle it over the flour mixture and then mix it all together with a plastic spatula until everything appears moistened. Slowly and gently fold in the butterscotch chips. Try not to work the dough too much. The dough will be a little wet. Try to form the dough into a ball using floured hands, transfer the dough onto the baking sheet and press into an 8-inch disk. Using a very sharp knife, cut into 8 equal wedges.

Bake for 20-25 minutes or until lightly golden. Remove form the oven and allow to cool for a couple of minutes.

Leftover scones keep well at room temperature for 2 days.
