One of the things I love about New Jersey, it's easy to strike up a conversation with people. Why? Because, at the very least, you've always got the weather to talk about. These past few weeks we've gone from chilly to down right mid-summer hot, hazy, and humid. But the garden is beginning to thrive, and the sunshine is calling us those summer places we love. For some it's the mountains, but for us it's the beach.
Whatever your summer spot is, get ready to enjoy it to its fullest. Because ready or not - here comes summer!

Put It On Ice - It's National Iced Tea Month!
I'm usually a soda girl. But when the weather turns steamier, Iced Tea is amazingly refreshing and invigorating. It can also be very good for you.
I've sampled a wide variety of teas - rooibos, herbal, blacks, greens, and so many blends. I've discovered that my favorite of all for icing is a rooibos tea with added fruit. Here's my favorite recipe. But feel free to play with your tea. How else will you discover your favorite icy goodness.
YUMMY TROPICAL ICED TEA 6 cups boiling water 6 teaspoons of rooibos tea (or 6 bags. I prefer loose leaf and usually have to use two teaballs) 1 cup unsweetened pineapple juice (if you've rece ntly cut up a pineapple, you can use the juice from that. THAT'S really good). 1/3 cup sugar or sweetener of your choice. (Just keep in mind that honey or other sweeteners will add flavor as well as sweetness. ) 1 medium orange halved and sliced 1 lime halved and sliced OPTIONAL ADDITIONS in any combination you choose: The core of a pineapple and/or 1/2 cup pineapple chunks 3 teaspoons lemon verbena leaves (put these in with the tea) 1/4 cup coconut milk 6 cut up strawberries 1/2 chopped mango
Put all the ingredients except the pineapple juice into an appropriate sized pitcher or pot. Boil the water and then pour over the other ingredients. Cover and let steep for 5 minutes. Take out the tea balls or tea bags and add the juices. I like leaving the fruit pieces in, but you can strain the whole thing if you'd like. Chill and serve. Sweet, refreshing, and full of goodness.
