One day last week while camping with my husband Robert in our airstream, I had some grilled pork tenderloin leftover from dinner the night before, and decided to make my Leftover Pork Quesadillas. This super easy and delicious dish is very flexible - you can switch out the ingredients based on what you have on hand, and to your taste. This trip I didn't have any turkey sausage (called for in the original recipe), but I did have some guacamole, so I added that on the side - along with sour cream and salsa. Savoring this flavorful dish, I was reminded why it is one of the most popular recipes on my website!

Ingredients:

1/2 onion, thinly sliced

1/2 green pepper, thinly sliced

Mexican seasoning*

2 cooked pork loin chops (around 1/2-inch thick), chopped

2 cooked small breakfast turkey sausages (like Jimmy Dean), chopped

2 8-inch flour tortillas

6 tablespoons shredded Cheddar cheese

Greek yogurt or sour cream

Salsa
