We have a big, double holiday weekend coming up - the 142nd annual Kentucky Derby on Saturday May 7th, followed by Mother's Day on Sunday May 8th. So, whether you are looking for an alternative to Derby Pie for your celebration of the "run for the roses" on Saturday, or wanting that delicious treat to make mom feel special on Sunday, I have the perfect dessert for you - Jam Cake with Caramel Frosting.



Jam Cake is a traditional Kentucky dessert, dating back more than 100 years. It was my mom Sally's favorite cake as a child - and she loved it throughout her life. It's very tasty, moist, elegant and impressive. Family recipes vary across the state of Kentucky, but they all start with a super flavorful spice cake which is then combined with blackberry jam. Our family also adds cocoa powder, raisins and chopped pecans. Then it's finished off with a scrumptious caramel frosting. Be prepared when you make this cake to hand out recipe cards!

Ingredients:

Cake:
1 cup sugar
1/2 cup butter
1/2 teaspoon vanilla
2 eggs
1/2 cup blackberry jam*
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/8 teaspoon salt
1 tablespoon cocoa powder
1/2 cup buttermilk
1/2 cup raisins
1/2 cup chopped pecans (optional)
 
Caramel Frosting:
1/2 cup butter
1 cup light brown sugar
1/2 cup whole milk
1 teaspoon vanilla
1 1/2 - 2 cups powdered sugar
 
*Can use any flavor jam, but blackberry is the traditional ingredient
