Friends often tell me that they shy away from cooking fish - mainly because they are afraid it will come out dry. To help them overcome their fear, I share this recipe (from my first cookbook A Well-Seasoned Kitchen®) for "Baked Fish on Lettuce" as it's pretty foolproof . OK, I know it sounds strange - baking fish on lettuce? Really? I can promise you that it's delicious! Once cooked, the iceberg lettuce has the texture of cooked cabbage (but milder in flavor) and ensures the fish stays super moist. This recipe has been in my files for many years, yet I still have friends who ask for it when they come to dinner. Quick and easy to prepare, you can put it together in the morning (takes around 10 minutes max), cover and refrigerate. Let it sit at room temperature while you have a cocktail, then pop it in the oven for around 30 minutes. That's it! Despite its simplicity, it's very impressive looking, especially if you bake it in an attractive pan. The original recipe called for red snapper, but since that fish is often on the warning list of fish to avoid, we suggest using halibut or tilapia instead. Enjoy!

Ingredients:4 cups shredded iceberg lettuce 2 pounds red snapper, tilapia or halibut fillets 1 cup mayonnaise 1 cup freshly grated Parmesan cheese 2 green onions, chopped Chopped fresh Italian (flat leaf) parsley, for garnish
