Recipe for Leftover Hard-boiled Eggs: Leek Gratin 
Last week I was being interviewed by my good friend Angie Austin for her national radio show, Daybreak USA, and we were chatting about what to do with all of those leftover dyed hard-boiled eggs after Easter. I always make egg salad (for my Toasted Bagels with Egg Salad and Smoked Salmon), but I also like to make this scrumptious Leek Gratin. So easy to prepare and full of flavor - chopped eggs topped with saut�ed leeks and a Parmesan-Cheddar cheese sauce. Leeks are in the same family as onions and shallots but are milder and a bit sweeter, which is why I love them in this dish. It pairs perfectly with leftover Easter ham!

Recipe: Leek Gratin
 
Ingredients:


8 hard boiled eggs, peeled

10 medium leeks

6 tablespoons butter, divided

2 tablespoons flour

1 1/2 cups whole milk

1/2 cup shredded white cheddar cheese (around 2 oz.), divided

1/4 cup grated Parmesan cheese

1/4 teaspoon cayenne pepper
