Delectable Holiday Dinners: Pork Tenderloin with Port, Balsamic and Cranberry Sauce
This versatile pork tenderloin dish is easy enough for everyday, but makes a sophisticated impression for holiday dinner parties. It pairs perfectly with wild rice, and can be made with the specialty olive oil and balsamic vinegar indicated in the recipe, or a good quality olive oil and aged balsamic does the trick as well.

Ingredients:

  • 1/2 cup dried cranberries
  • 1 teaspoon olive oil
  • 2 large pork tenderloins
  • 1 shallot, minced
  • 1/2 cup port
  • 1/4 cup cinnamon-pear flavored or aged balsamic vinegar
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1 teaspoon cornstarch
