Delicious Thanksgiving Desserts: Rum Pumpkin Tart
Wanting a new pumpkin dessert for Thanksgiving, I took the basic ingredients from our Fluffy Pumpkin Pie recipe (in A Well-Seasoned Kitchen® cookbook), adding crystallized ginger and rum to amp up the flavors. Originally, I created this recipe as a fun and delicious way to use my pots de crème collection (see Rum Pumpkin Pots de Creme recipe in my new book out now, Fresh Tastes). Though when I needed a dessert to bring to my book club's annual holiday dinner, I thought a tart would be easier to transport than the pots. Sure enough, this portable pumpkin tart recipe received rave reviews for its beauty, function, and of course, taste!

Ingredients:

  • 1 and 1/2 cups (9 to 10 ounces) gingersnap cookie crumbs
  • 4 tablespoons butter, melted
  • 4 to 5 tablespoons good quality golden or dark rum, divided
  • 3 tablespoons chopped crystallized ginger
  • 1 teaspoon unflavored gelatin powder
  • 7 and 1/2 ounces (about 1 cup) pumpkin purée (can use canned)
  • 1 egg yolk
  • 1/4 cup firmly packed light brown sugar
  • 5 tablespoons sugar, divided
  • Zest from 1/2 large navel orange
  • 5/8 teaspoon ground cinnamon, divided
  • 1/8 teaspoon ground nutmeg
  • 1 and 3/4 teaspoons vanilla, divided
  • 1 and 3/4 cups whipping cream, divided
