FRESH TASTES: MY NEXT COOKBOOK IS ON ITS WAY!
I am very excited to present Fresh Tastes, the follow-up to my critically acclaimed A Well-Seasoned Kitchen. I've gathered together a unique collection of recipes that showcase how fresh ingredients and new ideas can be combined to deliver extraordinarily flavorful dishes guaranteed to please all palates. 

Fans of A Well-Seasoned Kitchen will recall that my first cookbook was inspired by my mom Sally Clayton's love of cooking and entertaining. My second volume, Fresh Tastes, was born from creating dishes with a new and "fresh" perspective. In this book, I take the "complicated" out of cooking and entertaining, using fresh ingredients when and where possible.

Below is one of the recipes in Fresh Tastes, Last year my friend Dona Johnson's garden was overflowing with beautiful tomatoes and she asked for some delicious recipes, so I shared one of my favorites that comes from another dear friend, Kathy Soter. Perfect for a hot Indian summer day, it takes just minutes to put together, with no cooking required. Peaches and tomatoes make a delicious combination; Kathy recommends using white peaches and heirloom tomatoes. I updated Kathy's recipe using two fabulous products from EVOO Marketplace in Denver - their Lime Olive Oil and Peach Balsamic Vinegar. If you can't find those products, no worries - I include alternatives that are widely available. Enjoy!

RECIPE

Ingredients:

  • 2 large tomatoes, sliced into rounds
  • 2 large ripe peaches, peeled, pitted and sliced into rounds
  • 1/4 large red onion, very thinly sliced, preferably with a mandolin
  • 2 tablespoons chopped fresh cilantro, or more to taste
  • Red pepper flakes, to taste
  • Salt
  • Freshly ground black pepper, to taste
  • 1 tablespoon lime olive oil
  • 1 tablespoon peach balsamic vinegar
  • Fresh lime juice
  • Pinch of sugar
