Tangy Treats: Parmesan Buttermilk Cornbread

This cornbread recipe is a Clayton family classic, passed from my grandmother to my mom, and from mom to me. The buttermilk and Parmesan cheese give the bread a nice tangy flavor, making it the perfect accompaniment to a variety of dishes year round. In the summer, I get rave reviews from my guests when I serve with with Jeanne's Gazpacho - that recipe can be found in my first cookbook, A Well-Seasoned Kitchen. Enjoy!

RECIPE

Ingredients:

  • 1 cup flour
  • 1 cup cornmeal (stone-ground)
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg, beaten
  • 1 cup buttermilk
  • 3/4 cup water
  • 1/4 cup vegetable oil
  • 2 tablespoons chopped yellow onion
