Cool Soups for Hot Summer Nights: Chilled Tomato Dill Soup

This Chilled Tomato Dill Soup is always a hit, especially on hot summer nights. Bursting with flavor, the fresh tomatoes, onions, garlic and fresh dill make it a fan favorite - the dill adds a beautiful pop of green against the soup's salmon color. I like to take this dish to summer concert picnics at the Denver Botanic Gardens, serving it alongside one of my salads and a French baguette. Its quite rich, so small portions are best.

RECIPE

Ingredients:

  • 3 tablespoons butter
  • 3 medium yellow onions, chopped
  • 1/2 teaspoon chopped garlic
  • 6 large ripe tomatoes, cored, seeded and quartered
  • 3/4 cup water
  • 1 1/2 chicken bouillon cubes
  • 1 1/2 tablespoons fresh dill (or 1 1/2 teaspoons dried)
  • 3/4 cup mayonnaise
