For the Love of Mexican Food: Chicken Enchilada Suizas

There's no doubt I inherited my love for Mexican food from my mom. Tacos, enchiladas, burritos, tostadas - you name it, I'm a fan. This recipe for Chicken Enchilada Suizas (which was adapted from a similar recipe in the Junior League cookbook "Colorado Collage") was one of her favorites to serve at casual dinner parties or family gatherings. "Suizas" roughly means Swiss, and when used to describe enchiladas, it means the dish is topped with a cream or creamy cheese-based sauce. Enjoy! Or as they say in Spanish, disfruta tu comida!

RECIPE

Ingredients:

  • 1 1/2 pounds chopped or shredded cooked chicken
  • 1 tablespoon butter
  • 1 cup chopped onion
  • 1 green bell pepper, cored, seeded, and chopped
  • 1 red bell pepper, cored, seeded, and chopped
  • 8 ounces grated Cheddar cheese
  • 1 (4-ounce) can chopped green chiles
  • 1 cup green chile salsa
  • 1/2 cup chopped fresh cilantro
  • 4 teaspoons ground cumin
  • 2 teaspoons pureed chipotle peppers in adobo sauce, or to taste (optional)
  • 12 to 15 (7-inch) flour tortillas
  • 10 ounces Monterey Jack cheese, grated
  • 1 cup half and half
  • 1/2 cup chicken broth
