Re-Creating Restaurant Dishes: Artichoke and Chicken Chowder

Believe it or not, not all of our friends like to cook as much as I do. Our dear friend Wendy Bergen is an example...she doesn't cook, but she's an excellent hostess. Recently we spent time at her mountain cabin, and enjoyed a fantastic morning snowshoeing. To quench our ravenous appetites, Wendy served a delicious Chicken and Artichoke Soup she got from The Cheesecake Factory, and we all loved it. It's a great combination of flavors: red bell pepper, onion, mushrooms and garlic complement the artichokes and chicken, topped off with a mouthwatering cheese sauce. It was so good, I had to try to create it on my own, and below you'll find the resulting recipe - not exactly the same, but close, and also delicious!

RECIPE

Ingredients:

  • 2 tablespoons olive oil
  • 1 teaspoon chopped garlic
  • 1 1/2 cups chopped onion
  • 1 large red pepper, cored, seeded and chopped
  • 2 large celery stalks, chopped
  • 1 tablespoon fresh thyme leaves
  • 8 ounces mushroom caps (white or cremini/baby bella*)
  • 1/2 cup dry white wine
  • 4 cups chicken stock (or more to thin if needed)
  • 2 cups peeled and chopped Yukon Gold potatoes
  • 2 cups chopped cooked chicken, mixture of white and dark meat
  • 1 can (14 ounce) quartered artichoke hearts in water, drained and coarsely chopped
  • 2 cups milk (whole or 2 percent)
  • 1/4 cup flour
  • 1 cup freshly grated Parmesan cheese
