Intimidating Dishes Bite The Dust: Turkey Stuffed Pasta Shells

For years, even the thought of trying to make stuffed shells instantly caused me anxiety - they just seemed so complicated to prepare. But the presentation is so beautiful, and done correctly, stuffed shells are simply delicious. At the urging of my husband Robert, I decided to let fear go and take my chances...and am I glad I did! Not only did I find they're surprisingly easy to make, I now serve them all the time! This recipe for Turkey Stuffed Pasta Shells is visually impressive, scrumptious, and as an added bonus - it's healthy too, using ground turkey, lots of veggies and small amounts of cheese. Perfection!

RECIPE

Ingredients:

  • 12 to 15 jumbo macaroni shells
  • 8 ounces ground turkey (or chicken) sausage
  • 1 cup finely chopped carrot
  • 1 cup finely chopped zucchini
  • 1 cup finely chopped red or green pepper
  • 1/4 cup finely chopped onion
  • 4 ounces cream cheese, cut into squares
  • 1 tablespoon chopped fresh basil
  • 1 1/2 teaspoons chopped fresh dill
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups spaghetti sauce
  • 1/4 cup grated Parmesan cheese
