Sweet on Spring: 

White Chocolate and Lime Tart with Strawberries

Spring is just around the corner, and the weather in Colorado is finally in sync with the season. As we recently "sprang forward," it's the perfect time to share a recipe proven to satisfy everyone, even those who claim to not have a sweet tooth! My mom, Sally, got this White Chocolate and Lime Tart with Strawberries recipe from a friend in Vancouver, and the citrus in the filling is the perfect complement to a main fish dish course, and works well with poultry, too. Easy to make, it's simply scrumptious, and guaranteed to impress your guests!

RECIPE

Ingredients:

Crust:

    • 3/4 cup flour
    • 1/3 cup whole almonds
    • 1/3 cup powdered sugar
    • 1/4 teaspoon salt
    • 6 tablespoons chilled butter

Tart:

    • 1/4 cup fresh lime juice
    • 1/2 teaspoon unflavored gelatin
    • 3/4 cup whipping cream, divided
    • 5 ounces white chocolate, chopped
    • 1 teaspoon grated lime zest
    • 2 tablespoons sugar
    • 2 tablespoons sour cream

Topping:

    • 3 cups sliced fresh strawberries
    • 2 tablespoons red currant jelly
