Book Two & A Brunch Recipe: Testers Wanted!

I've always loved Eggs Benedict, particularly my mom's, because her hollandaise sauce was sooo scrumptious - very lemony, without being too tart. Unfortunately, I wasn't able to get her Eggs Benedict recipe before she passed away, and wasn't able to find it in her recipe boxes or files either. So, when the Denver specialty olive oil and balsamic vinegar company EVOO Marketplace asked me to teach a class on breakfast and brunch recipes featuring their products, I realized this was my chance to try to re-create mom's Eggs Benedict. I knew from watching Mom cook that she used the "quick and easy" method for making hollandaise, which is to do it in a blender. So I started with my basic blender hollandaise sauce recipe and experimented, adding various EVOO products to the mix. I finally hit on the winning combination of butter, egg yolks, lemon juice, EVOO's lemon balsamic vinegar and their Gremolata Olive Oil. My husband Robert LOVED it, as did all our friends, and it was a big hit at my brunch cooking class (at EVOO Marketplace) as well! When poaching the eggs, I tend to cheat a bit and use the Denmark Tools for Cooks Egg Poacher. RECIPE

Ingredients:

  • 3 English muffins
  • 4 large egg yolks, at room temperature
  • 2 tablespoons fresh lemon juice (or to taste)
  • 1 tablespoon EVOO Sicilian Lemon Balsamic Vinegar
  • 1/2 teaspoon kosher salt
  • Fresh ground pepper, to taste
  • 3/4 cup plus 2 tablespoons butter, divided
  • 1/4 cup EVOO Milanese Gremolata Olive Oil
  • 6 large eggs
  • 6 slices Canadian bacon
  • Chopped parsley, chives or dill for garnish
