A Flavorful New Year: Cajun Meatloaf

One of my long-time favorite healthy Cajun dishes, Cajun Meatloaf, is the perfect dish for cold and snowy January nights (and it is only 8 Weight Watchers PPV per serving!). Full of flavor, you're in control of just how spicy this dish can be based on how much jalapeño pepper, Tabasco and cayenne pepper you add. The ingredient list may be long, but meatloaf doesn't take much time or energy to prepare. I like to serve it with our Cauliflower Purée, which you can find in our cookbook, A Well-Seasoned Kitchen.

RECIPE

Ingredients:

  • 2 teaspoons salt

  • 1 1/2 teaspoons fresh ground pepper

  • 1 1/2 teaspoons paprika

  • 1 1/4 teaspoons cumin

  • 1 1/4 teaspoons ground nutmeg

  • 3/4 teaspoon cayenne pepper

  • 3/4 teaspoon ground white pepper

  • 1 1/2 teaspoons fresh thyme leaves (or 1/2 teaspoon dried)

  • 1 tablespoon olive oil

  • 1 1/2 cups chopped yellow onion (1 to 2 onions)

  • 1 1/4 cups chopped celery

  • 1 cup chopped red bell pepper

  • 1 small jalapeno pepper, seeded and finely chopped

  • 1 tablespoon chopped garlic

  • 1 1/2 tablespoons Worcestershire sauce

  • 1 1/2 teaspoons Tabasco sauce

  • 1/2 cup whole milk (can also use 2%)

  • 1/2 cup tomato puree

  • 2 teaspoons red wine vinegar

  • 1 1/2 pounds lean ground beef

  • 3/4 pound lean ground pork

  • 1 cup breadcrumbs

  • 3 egg whites

A Well-Seasoned Kitchen remodeled for the holidays

Just as our wonderful kitchen designers from Wm Ohs and builders from Encore Homes promised, our new kitchen was ready in time for Christmas. It was a joy to have all our new gadgets in place to prepare various dishes, and our friends and family raved at the total makeover, and loved the way we incorporated a beautiful mosaic of the "A Well-Seasoned Kitchen" logo into the design. And as we enter the New Year, my husband Robert is having a hard time keeping me OUT of the kitchen. I foresee a lot of days and nights designing and testing recipes for our second cookbook (due out later this year), gatherings, and more!
