Crepes for Breakfast: Scrambled Egg, Spinach and Ham Crepes

Crepes are back. Not long ago, Chef Sarah Moulton lead a session at IACP (International Association of Culinary Professionals) on "How to Conduct a Killer Cooking Demo." Know what she made? Crepes. And suddenly, everywhere I went, I found crepes featured on the menu. Having never before attempted a crepe recipe, I was inspired to try, and low and behold, created a healthy breakfast crepe for Sunday breakfast. Not only was it delicious, it was so easy to make! I use whole-wheat flour and almond milk, but if you prefer, you can use regular flour and/or regular milk. On the same note, I use scrambled egg whites for the filling, but scrambled whole eggs work well too. I put the leftover crepes in the freezer for future use, since I know I'll always get creative, finding more fillings to go in them!

RECIPE

Ingredients:

  • 2 eggs
  • 1 cup almond milk
     (you can also use fat free, low fat or whole milk)
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 egg whites
  • 4 wedges Laughing Cow cheese
  • 1 to 1 1/2 cups fresh baby spinach
  • 1/4 cup chopped cooked country ham
    (you can substitute Virginia ham or bacon)
  • 1/4 cup chopped green onions

We are LOVING our new kitchen, and as promised, we're on track to be done for the holidays. Each day I find something new to love... but I've been getting a lot of compliments on the Brazilian quartzite countertops we selected in "sea pearl." A rare natural stone in a beautiful color, they just set the tone for the room and bring a bit of sparkle, perfect for the holiday season!
