Comfort Foods for Changing Seasons

There's no doubt its Fall in Denver, and the last week or so has given us a good taste of the new season. Fall always ups my cravings for comfort foods, and this Ham and Roasted Vegetable Pot Pie recipe is one of my favorites from when I lived in Europe. I modified it a bit, roasting the vegetables (carrots, parsnips, and celery root) instead of steaming them (which is the original method). You can easily make this dish vegetarian by omitting the ham if you prefer, and using puff pastry for the crust makes it a snap to assemble.

RECIPE

Ingredients:

  • 1/2 cup unsalted butter, divided
  • 12 medium-sized shallots, peeled, trimmed & cut in half
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons sugar 2 large carrots, peeled & cut into 1/2-inch square pieces
  • 1 turnip, peeled & cut into 1/2-inch square pieces
  • 1 celery root, peeled & cut into 1/2-inch square pieces
  • 1 to 1 1/4 cups chopped ham (preferably country ham)
  • 1/3 cup flour
  • 2 1/2 cups milk (can use whole, 2 percent or skim)
  • 2/3 cup grated Parmesan cheese
  • 1/3 cup chopped Italian parsley
  • 1 egg, beaten
  • 1 sheet frozen puff pastry, thawed

A Well Seasoned Kitchen Remodel Continues

Just as they're wrapping up the final details on our kitchen remodel (well, mostly), we're off to Southern California for an adventure in our Airstream. It's not that surprising that we're leaving town right around the time we can begin enjoying our new space, but what can I say...I have cooking demos to do, a cooking segment on Good Day LA, and a big birthday to celebrate (my husband Robert)! We've left the last minute details in the good hands of our designers and installers from Wm Oh's, as well as our contractor, Encore Homes, and look forward to returning home after our trip to let the entertaining adventures begin!
