Easy Recipe Adaptations for Healthy and Delicious Meals

So many of us are trying to eat healthier these days, but adapting recipes can be challenging. I found a delicious sounding garlic cream sauce in mom's recipe box, but wanted to make a healthier version. My husband Robert and I enjoy almond milk in our morning coffee, so we always have some on hand. It was a light bulb moment! I replaced half and half in mom's recipe with almond milk, and it was the perfect compliment to her Roasted Chicken Breasts with Garlic Cream Sauce! In keeping with the almond theme, I sprinkle roasted slivered almonds over the chicken just before serving. Have a nut allergy? No problem. Simply use low-fat milk instead of almond milk.

RECIPE

 

Ingredients: 

  • 2 tablespoons olive oil
  • 1 tablespoon chopped garlic
  • 2 tablespoons flour
  • 1 cup unsweetened almond milk
  • 4 boneless, skinless chicken breasts
  • paprika
  • onion salt
  • ground pepper
  • 2 tablespoons toasted slivered almonds
  • 2 tablespoons chopped fresh parsley

The cabinets are in! The countertops are coming! The appliances...well, we've made some minor changes with appliances, but we're on track to finish on or just about on schedule.
