Knock that dinner party out of the park

Denver Post gave rave reviews for a cooking class I conducted at the Denver Botanic Gardens a few months ago. The class, "Appetite for Seduction," offered a turnkey menu for a romantic dinner. One of the easiest dishes on the menu was my Prosciutto-Wrapped Asparagus. It's elegant, simple and dresses up any dinner party, romantic or not. You can make this recipe with just 4 ingredients - asparagus, olive oil, kosher salt and prosciutto - how easy is that?

RECIPE

If you are trying to get ahead of the game, you can make the bundles up to three hours in advance and store them in the refrigerator. Make sure to bring them to room temperature before baking. 

 

Ingredients: 

  • 24 to 32 asparagus spears, tough ends removed 

  • Extra virgin olive oil 

  • 8 thin slices of prosciutto 

  • Fresh Parmesan cheese (optional)

  • Fresh toasted bread crumbs (optional)
