Benedictine Cheese Canapés
|
With Derby Day upon us, I thought I would share one of our favorite family Derby recipes. Mom was raised in Louisville, Kentucky, and as a result, Derby Day is a major holiday for our family! We all love Benedictine Cheese, a traditional dish to serve when the horses are running. Frankly, it's fresh flavors make it an excellent hors d'oeuvres as part of any spring or summer dinner. You can serve the cheese in a bowl surrounded by toast points (see "time-saver" directions), or as individual canapés. If you come to my book signing on May 6th at A Line Boutique , you will be able to sample some of these delicacies!
1 loaf thinly sliced white bread (such as Pepperidge Farm) 1 large cucumber 8 ounces cream cheese, at room temperature 1 tablespoon grated onion 1 tablespoon mayonnaise 1/4 teaspoon salt (or more to taste) Cayenne pepper Dash green food coloring Dash sugar (only if needed) 1 pint cherry tomatoes
