Recipe of the Week-- Salsa-fied Egg White Bites and Tuna Crunch Bites
This week we've got a couple of great and easy to make snacks that will put a new spin on a couple of old favorites.
Egg White Bites
Simply hard boil 3 eggs, slice in half, and remove the yolks. Chill if needed. Place 1 tsp. salsa (see our recipe below or use store bought) in each half and enjoy.
Here is our own recipe for Salsa from the Thin&Healthy Forever Cookbook:
¼ cup onion, chopped
8 plum tomatoes, coarsely chopped
½ red onion, diced
2 jalapeno peppers, diced
1 clove garlic, chopped
¼ cup fresh coriander
½ teaspoon ground roasted cumin
¼ cup lime juice
Light salt and pepper, to taste
Combine ingredients in a non-aluminum bowl. Cover and let stand several hours at room temperature or overnight in refrigerator.

Tuna Crunch Bites
Here's another super simple idea. Top 10 round cucumber slices with 3 ounces of water-packed tuna for a protein-packed, crunchy snack.
