Recipe of the Week--Stuffed Tomatoes
Stuffed Tomatoes Recipe
4 oz lean ground beef/turkey 2 medium sized tomatoes 1 Melba Toast, crumbled 1 tablespoon minced onion 1 clove garlic, diced 1/8 teaspoon garlic powder 1/8 teaspoon onion powder 1/8 teaspoon oregano 1/8 teaspoon basil Salt and pepper to taste
Directions:
Hollow out the tomatoes and set pulp aside, sprinkle with salt and turn upside down to remove excess water.
Combine beef, onion, garlic, garlic powder, onion powder, oregano, and basil and brown hamburger/turkey.
While hamburger/turkey cooks, puree tomato pulp in a food processor or blender with some salt and pepper.
Once the meat is cooked, add tomato pulp and mix well. Fill hollowed tomatoes with the beef mixture and top with Melba toast crumbs bake at 350 degree oven for 20 minutes.
