It's vital to realize the impact the words that you let run through your own mind and the words you speak can have, because your own mind hears it all.

I began my journey to better health in June 2014 and committed at least a year to the process. The two years prior to that I battled injuries and surgeries - my weight was up and my overall fitness and strength was gone. The first seven months of this journey I followed the Thin and Healthy program. Having a coach helped me tremendously - it held me accountable, gave me someone to talk to about the program, and my coach helped me develop the tools to stay the course through all of life's challenges.

I made the switch to the 20/30 Fast Track plan in February of this year after my weight loss stagnated at 22 pounds and I seemed to hit a wall. I completed my 30 days and am now going strong with Listen to Your Body.  Whether my weight continues to drop or if I've found my body's normal weight, I want to reinforce and practice all that I've learned and be confident that the changes I've made are permanent. I will also continue to work with my trainer and keep strengthening my body. I've lost 40.5 pounds and dropped 3 sizes.

To anyone thinking about making a healthy lifestyle change - you CAN do it and it is so worth it. My biggest words of wisdom are to be patient, commit to the process, stay positive and surround yourself with people who will support you.


Weight Loss Hint--Turn Off The Lights 

Experiencing more darkness at night could make your body lighter. Researchers at Ohio State University found that mice who sleep in total darkness are far less prone to obesity than those who snooze in bright light or dim illumination (e.g., a TV screen). Laura Fonken, a neuroscience student who led the study, says that the mice who slept with light exposure ate at odd times (the equivalent of late-night eating)

Giving your body digestive enzymes to help aid digestion is like hiring more workers for an extremely large task. The more workers you have, the better executed the task will be. Digestive enzymes help fight to keep your gut healthy. They are the key substances of the digestive process, working to break down our food for proper absorption. If you feel bloated after eating, digestive enzymes may be right for you.     

The aging process and certain health issues cause a reduction in the body's production of digestive enzymes. One effect of this reduction is a bloated feeling soon after eating a large meal. Recipe of the Week--Roasted Veggie Chicken Salad       

 

Ingredients:

6 stalks asparagus
2 cups eggplant cut into 1-inch cubes
1 cup red bell pepper cut into 1-inch pieces
2 artichoke hearts packed in water, drained, halved lengthwise
One 3-oz. raw boneless skinless chicken breast cutlet, pounded to 1/2-inch thickness
Dash each salt and black pepper
2 tbsp. frozen sweet corn kernels, thawed
2 tbsp. bagged sun-dried tomatoes (not packed in oil), chopped
3 cups chopped romaine lettuce
1 oz. (about 2 tbsp.) diced avocado
2 tbsp. low-fat or fat-free balsamic vinaigrette
1 tsp. Dijon mustard

Directions:
Preheat oven to 425 degrees. Spray a baking sheet with nonstick spray.

Lay asparagus, eggplant, bell pepper, and artichoke hearts on the baking sheet. Bake until softened, about 20 minutes.

Meanwhile, bring a grill pan (or skillet) sprayed with nonstick spray to medium-high heat. Season chicken with salt and black pepper and place in the pan. Cook for about 3 minutes per side, until cooked through.

Roughly chop asparagus and artichoke hearts. Transfer all cooked veggies to a medium bowl. Add corn and sun-dried tomatoes, and toss to mix.

Place lettuce in a large bowl (or on a large plate) and top with veggie mixture and avocado. Slice chicken and lay it on top.

In a small bowl, thoroughly whisk vinaigrette with mustard. Pour mixture over salad or serve on the side. Enjoy!
