Bike riding is a great summer activity that offers you a number of health benefits. Contrary to normal perception, cycling does not only improve the muscles in your legs. Recipe of the Week--Lemon Pie
Here is a cool and refreshing treat to beat the summer heat!
Lemon Pie
2 packages T&H vanilla pudding supplement
1 container (1/2 ounce) sugar-free lemonade drink mix (crystal light)
4 packages sugar substitute
2-¾ cups fat-free milk
1 container (8 ounces) fat-free frozen whipped topping, thawed
2 (9-inch) graham cracker crusts
Combine the first three ingredients in a medium bowl; stir well. Add milk; beat with a wire whisk until thickened; gently fold in whipped topping. Spoon into graham cracker crust.
Cover and chill for at least 3 hours.
Makes two pies
Serves: 16 Fat grams: 7.4
Phase: 3, 4 Protein: 4.2
You may substitute sugar-free vanilla pudding in place of T&H supplement, although best results are achieved using supplements
