Greetings!
These past few weeks, so many folks have been plagued with walking pneumonia, and now the flu.  Remember, health can't be bought in a bottle. It takes many years for our bodies to get to the condition they are in.

We are body, soul, and spirit, and we need to look after all three areas in our lives in order to to obtain good health. As the holidays lie ahead of us, I would encourage you to try the following; listen to your body, partake in fresh air and sunshine, drink pure water and enough of it, eat natural foods, rest, get enough sleep, exercise, do everything you can to remain in peace with those around you, and most importantly, spend time with the Lord.

A Healthy Immune System

The stronger your immune system, the better chance your body has to resist and fight disease. The immune system is our natural defensive mechanism.

Factors  that negativity affect the Immune System

Air pollution, pesticides, artificial chemicals, drugs, alcohol, tobacco, heated fats, antibiotics, stress, and anxiety.

On the other hand, laughter, joy, inner peace, and tranquility all boost the immune system. A diet high in raw, alkaline food is of extreme importance for proper immune function. Try eating something raw before each meal, make all your snacks between meals raw, and make freshly squeezed juices part of your healthy eating regime.

All the earth's energy comes from the Sun. Photosynthesis takes place when the Sun shines on a plant. The green pigment in plants is called chlorophyll, and its interaction with the sunlight produces the glucose (sugar) that feeds the plant. Chlorophyll is very alkaline and full of vital energy. It contains vitamins, minerals, enzymes, and amino acids.

It is also known to detoxify the body, and is anti-carcinogenic. Good sources of chlorophyll are micro greens (sunflower shoots), watercress and green leafy vegetables, particularly the juice of young barley grass.

Christmas Table Setting

In November, I had the opportunity to decorate a table at our church's annual "Lady's Thanksgiving" meal. I put together what I had, and the table looked fresh and crisp. Homemade gifts for each person  are always special. I wanted to share this idea with you to get your creative juices flowing for your Christmas table!

The center piece was an assortment of granny smith apples, candles, porcupine quills from South Africa, and guinea fowl feathers.

Healthy Holiday Treats

Growing up, Christmas was such a special time for us. One of the things I remember the most was my mom taking a whole Saturday - usually the week just before Christmas - to bake up a storm. We would make so many different cookies and real fruit cake (this was usually baked a month before time!) Now, thousands of miles separate us from our family, but the memories still linger.

Here are just a few simple, quick and delicious recipes you can enjoy this festive season.

Fancy Apple Slices

De-core a red or golden delicious apple and cut into slices.
Spread with raw almond butter or peanut butter (no added sugars) and top with crumbled chocolate gluten-free pretzels.

Chocolate Coconut Propea Truffles

1 cup walnuts

½ cup pumpkin seeds - raw

¼ cup good quality raw organic cocoa powder (carob powder can also be used)

¼ cup ProPeas powder

1 cup fresh Mejool dates - pitted (about 10)

Unsweetened coconut for rolling

Soak dates in boiling/hot water for about 5 minutes and strain. Set aside.  In a food processor, combine walnuts, pumpkin seeds, cocoa or carob powder, and ProPeas.  Process until combined and walnuts and pumpkin seeds have broken up. Add the fresh pitted dates and process again so that the mixture starts coming together into a ball.  You may need to add a teaspoon of  the strained water if the mixture is too dry. Roll into balls and then into the coconut. Keep refrigerated and enjoy for up to two weeks. Can be frozen and eaten from the freezer.

The beauty about these are that they are wheat-free, gluten free, low carbohydrate, high in protein, vegetarian and vegan-friendly and low sugar. Enjoy!

Delicious Date Balls

1 cup oats
1 cup unsweetened coconut
1 1/2 cups dates (no pits)
1 tsp raw honey

Soak dates in boiling/hot water for 10 minutes, then strain, reserving the water. In a food processor, blend dates until smooth. Add honey and then coconut and oats and blend until well mixed. Roll into balls and then toss the date balls in some unsweetened shredded coconut and store in a sealed container. May be stored in the freezer and eaten from the freezer.

Variations: finely grated lemon rind, 1 tsp ground cinnamon and  finely chopped pecans or almonds may also be added.

The date balls are pictured in the center of the picture above.

Festive Apple Slices

Core golden delicious apples. Spread with peanut or almond butter (no added sugar). Sprinkle with finely chopped cranberries, almonds, raisins, mini dark chocolate chips (optional)
and unsweetened coconut flakes.

Clean Cuisine Chocolate Chia Cookies

This recipe is in the December issue of Healthy Living Magazine. it is from the new book, Clean Cuisine, by Ivy Larson.

1½ cups raw almonds
8 pitted dates
2 cups barley flour
¼ cup Barlean's Organic Chia Seeds
½ cup Barlean's Organic Extra Virgin Coconut Oil, softened
½ cup real maple syrup
½ teaspoon unrefined sea salt
½ cup vegan mini chocolate chips

Preheat oven to 350 degrees.

Put the almonds in a food processor and process into
crumbs. Transfer almond crumbs to a large mixing bowl.

Put the dates in the food processor and pulse 6 to 7
times, or until dates are well ground. Add the dates to the almonds.

To the mixing bowl, add the barley flour, chia
seeds, coconut oil, maple syrup and salt. Combine all
ingredients with a wooden spoon. Form the mixture into
tablespoonful balls and space them evenly on a large
cookie sheet. Using your index finger, make an indent in
each cookie. Fill each cookie with 4 or 5 mini chocolate
chips.

Bake cookies for 18 minutes. The cookies should be
done at this point, but the chocolate will not be totally
melted. As soon as you remove the cookies from the
oven, take the back of a spoon and gently press down
on the chocolate so that it melts. Set the cookies aside to cool and harden before eating.

Surviving the Holidays with the right tools

The products that I have listed below have helped countless people as they travel over the festive season. One cannot always control your environment, but these are wonderful tools that can be utilized very effectively.

Prepzymes

Helps for indigestion, combats an over full feeling after eating a heavy meal, heartburn.

Take 1 when eating heavy, cooked food.

Herbal Fiberblend Capsules

When out of sorts and away from home one tends to clog up. We never leave home without our Herbal Fiber Blend, you are assured to keep your colon clean with this wonderful colon cleanser. I like taking these at night as the whole system shuts down at night and the herbal fiber blend can get in there and work. NB - Fiber bulks in the colon so it is important to drink 6-8 glasses of water when taking any form of fiber. Water activated the herbs in the herbal fiber blend.

Florafood and Probiotics

My favorite product and I am never without it.

May help with: digestive bloating/flatulence/gas.

Culturing your own Kefir can also be beneficial to your health - we culture and drink coconut milk kefir.

Composure

Holidays can sometimes cause anxiety and this is an inexpensive product that is just made from pure herbs that calm one and helps to settle the tummy too. Also great for young girls with period pains. You will notice you sleep better too.

Veggie D

Most people I know are on a vitamin D supplement. AIM Veggie D is a vegan form of vitamin D and comes in capsule form. I am so excited about this as it is a more natural source of vitamin D than its many counterparts out there!

Spiritual Health

We have almost come to the end of 2012. I would like to thank you so much for your support and want you to know that I am here to walk a road with you.  May you have a blessed festive season with your family, and may you experience the same love that Christ the King had for us when He sent us His Son. The greatest gift there ever was!

Let us remember those families who have lost their precious little children and family members in the shooting at Sandy Hook Elementary School in Newtown, Connecticut. Let us keep them close in our prayers. This entry from Max Lucado's blog was a special one.

Until next time

Yours in healthy living,

Lere
