Life has been busy, thus the lateness of my newsletter. As they say, better late than never! It's good to connect with you again. I took the summer off to be with my girls, seeing clients here and there. I spent many hours on the tennis court as my oldest daughter wanted to try out for the Varsity Tennis Team at her school. It all paid off and she made the team.
I have been asked to walk a road with one of the WIS TV anchors, Len Kiese. He is on a journey to better health and has lost over 25 pounds already. He also has a trainer that is working with him. I am so proud of him as he continues to make small changes which are allowing him to get healthier. Check out his journey:

Although apples are available all year round, here in South Carolina, they are now in season with so many more varieties to choose from. I grew up with Gala, Golden Delicious, Red Delicious, Granny Smith, and Fuji, but the orchards in North Carolina offer such a diverse variety of apples. For example Mutsu, Cortland, Jonagold, Ida Red, Arkansas Black, Honey Crisp, Pink Lady, etc.
About three weeks ago, we went apple picking at Sky Top Orchard in North Carolina. What a special experience it was for all of us. I had to smile when a man lifted his son into the tree and said, "Now son, this is where apples really come from" and encouraged him to pick an apple.

Apples and Nutrition
Apples are bursting with phyto-nutreints and antioxidants. They are low in calories, have no dietary fat and rich in fiber, which will help to prevent absorption of bad (LDL) cholesterol in the gut. Apples also contain vitamin C, beta-carotene, B-complex vitamins, flavonoids and a small amount of potassium, phosphorous, and calcium. Remember potassium is beneficial for the heart.

Spice of Life Apple Smoothie
I cup unsweetened almond milk 2 mejool dates (de-seeded) (Soak in hot water for 3 mins) 1 tsp cinnamon 1/8 tsp cloves 1/8 tsp nutmeg a thumb nail piece of fresh ginger 1/8 tsp chile powder 1 Fuji or any other sweet apple 1/2 to 1 cup ice * 1 Tablespoon coconut milk kefir (optional) Blend almond milk and softened dates until well blended. Add the rest of the ingredients and blend until smooth.

Red Apple Tea
Brew a cup of Roobios tea, sweeten with honey and add half of small red apple that has been cut into cubes. Sprinkle with cinnamon.

Apple and Sweet Potato Hash browns
1 large sweet potato 1 large apple 1 small egg 1 Tbsp coconut oil or organic butter
Peel and grate the sweet potato. Grate the apple into the same dish and mix together with egg.
Heat the butter or coconut oil on medium heat in a non-stick pan. Arrange spoonfuls of mixture in the pan and flatten into circles and cook for 3 minutes a side.
* Use 2 eggs if it is a very large apple and sweet potato
* I serve these with brunch. Top with avocado or drizzle with raw honey.

Go Green Salad
2 granny smith or golden delicious apples
1 cup broccoli
1 cup green beans
1 cup mange tout/flat green peas
1 small avocado, diced
1/2 cup chickpeas/garbanzo beans
1 handful of arugula/rocket
Dressing
1/2 cup fat-free Greek yogurt or coconut milk Kefir if dairy intolerant
2 Tbsp olive oil
2 Tbsp white balsamic vinegar
Toss all the salad ingredients together. Mix together the dressing ingredients and pour over the salad and serve.

Baked Apples
5 Golden Delicious apples 1-2 Tbsp coconut oil or organic butter 2 Tbsp coconut milk 1/2 cup almond meal (ground almonds) 2 Tbsp finely chopped walnuts 1/4 cup honey
Pre-heat oven at 350 F. Wash and core 5 apples then rub with coconut oil or butter
Mix almond meal, chopped walnuts, honey and coconut milk together.Mix until well combined. Use this mixture to stuff the apples.
Arrange the stuffed apples in a greased baking pan. Then drizzle each with honey and sprinkle with cinnamon Bake for 20 minutes and serve with dairy free ice cream or custard.
Alternatively: rub with coconut oil or butter, drizzle with honey and top with cinnamon and bake as above.

Canned Apples
6 cooking apples, peeled, cored and sliced
1/4 xylitol and 1/4 cup brown sugar
6 C (1.5 liters) water
1 vanilla pod
1 cinnamon stick
1 lemon
1 slice of ginger
In a large saucepan, dissolve the xylitol and sugar in the water. Bring to a simmer and add the vanilla seeds scraped from the pod and the cinnamon stick. Allow to simmer for 30 minutes. Meanwhile, peel, core and slice the apples. Eighths work best. Allow to rest in acidulated water (cover the apples with cold water in a glass container and add a large squeeze of lemon to avoid the apples from going brown). Once the syrup is ready, add the apples and allow to poach for 5-10 minutes. Test that the fruit is ready by trying to squash it against the side of the saucepan. You should not be able to mash it. Remove the fruit from the syrup with a slotted spoon and pack loosely into sterilized jars. Bring the syrup back to the boil for about 10 minutes. Carefully press the cinnamon stick, the vanilla pod and the slice of ginger in between the apples. Pour the boiled syrup over to cover the fruit. Allow to cool in the jar before sealing. Refrigerate once opened.

Delicious Apple Sundae
2 apples
2 Tbsp raw almond butter
1/4 cup maple syrup
1 1/2 tsp almond extract
2 Tbsp chopped almonds
2 Tbsp grated coconut
Coarsely chop almonds and set aside for topping.
In a small mixing bowl, blend almond butter, maple syrup and almond extract until smooth. It should be the consistency of caramel sauce.
Cut the Apples into quarters and core. Then cut the quarters into 3 pieces lengthwise and 1/4-inch pieces crosswise. Place in two serving bowls.
Drizzle the sauce over the two bowls of apples and top with almonds and coconut.

Spiritual Health
There are times in your life where you may be in a place that is very challenging. It seems like nothing makes sense and everything feels directionless. But I have been encouraged lately to continue resting in the Lord during trying times like these. I was encouraged by the following scripture:
8 And God is able to bless you abundantly, so that in all things at all times, having all that you need, you will abound in every good work. 2 Corinthians 9:8 New International Version (NIV)
