January is California Restaurant Month

 

 Madera County is excited to participate in California Restaurant Month!  

 

California is the top destination in the U.S. for culinary travel, with visitors drawn to the rich and diverse wine and food selections. We are excited to announce a few of our amazing restaurants who will be participating for Madera County: Ducey's On the Lake RestaurantSouth Gate Brewing Company and Erna's Elderberry House. Erna's Elderberry House will be participating from January 23rd-31st, so be sure not to miss it! Head over to each and check out the special deals and delicious menus during January. From succulent seafood to decadent desserts, our talented chefs  provide a dinner that will have your taste buds singing. It's also a great time to try some of the award-winning wines from the family-owned wineries of the Madera Wine Trail. Our restaurants match the local wines perfectly with their best dishes.

Chefs' Holidays at the Ahwahnee

Held each year in January and February, Yosemite's Chefs' Holidays feature some of the world's most innovative and acclaimed chefs. This Northern California cooking adventure provides a showcase for the range of styles, personalities and trends that characterize the American culinary scene..
New Year's Eve at Bass Lake

Ring in the New Year at Bass Lake with a special sunset dinner, free magic show or party with live music. And of course, fireworks at midnight!
Celebrate the New Year - Vegas Style!

This year, Tenaya Lodge will host a Vegas-inspired New Year's Eve soiree guaranteed to ring in 2015 with glitz, glamour and fun. The evening will feature upscale dining, cocktails, a performance by award-winning "Impressions That ROCK!" Vegas Entertainer GREG LONDON - Winner of Nevada Magazine's 2009 "Entertainer of the Year" award and their 2011 "Show of the Year."


Children 13 years and older are welcome to attend the main New Years Eve party, but wee ones will have a blast at their own carnival-themed party for children 4-8 years old and a fancy "black-tie" event for tweens 9-12 years old, 7pm - 1am.
New Year's at The Ahwahnee

What better way to celebrate your accomplishments and inspire you to greater heights in the year to come than with a Yosemite New Year's Eve celebration in Yosemite National Park?  Choose between the elegant, black-tie celebration at The Ahwahnee® or the family ambiance of Yosemite Lodge at the Falls. Wawona Hotel also offers a specially-designed New Year's Eve menu in their dining room.
Champagne and Masquerade Event - New Year's at Erna's Elderberry House

 

In its inimitable style, Oakhurst's very own 5-star Erna's Elderberry House offers a very special New Year's Eve Champagne and Masquerade Event. Chef Jonathon will be serving a 7-course menu, featuring 3 decadent desserts. There are two seating's, 5 pm and 9pm. The later seating will feature live music by the Sierra Jazz Trio, fireworks, a champagne toast at midnight and a few other surprises you'll have to attend to find out. Ring in the New Year with Wine!

Enjoy a wine tasting at Quady Winery as they celebrate their 40th year in business during 2015! Andrew and Laurel Quady broke away from the norm by producing sweet wines rather than dry, which are now recognized worldwide, exporting to over 20 countries. Stop by and see a true gem in the Central Valley. Tasting room is open Mon-Fri from 9am-4:30pm and Sat- Sun 12 - 4:30pm. Cheers to a new year!

Featured Recipe
Crab Cakes with Chipotle Aioli and Avocado Compote

Tune in Tuesday, January 13th with Kopi and Kim on Great Day/KMPH Fox 26 to watch a live demonstration of the recipe below by Chef Jonathan Frabotta of Ducey's On the Lake RestaurantGreat Day is on 7-10am. Look for Jonathan at 8:20am.  

Ingredients
1 pound white or claw crabmeat, picked free of any bits of shell
1 teaspoon dry mustard
1 egg

1/2 teaspoon minced fresh parsley

1/2 teaspoon old bay

1 teaspoon lemon zest and juice

1 teaspoon worcestershire

1 cup panko bread crumbs

Salt and pepper to taste

2 tablespoons oil

2 tablespoons butter

 

Directions

To prepare the crab cakes, add all ingredients in a bowl and gently fold in the crabmeat.

Form the mixture into 8 patties, about 1/2-inch thick. In a bowl, place 1 cup of panko bread crumbs. Crust the crab cakes on both sides of the patties. Refrigerate until firm, about 2 hours.

Using a skillet, combine the oil and remaining 2 tablespoons of butter. Sauté the crab cakes in the hot oil-butter mixture for approximately 3 minutes on each side or until golden brown. These crab cakes can also be baked for 7 to 10 minutes in a 400 degree F oven.

To serve, spoon the chipotle aioli along side each crab cake with the avocado compote on top.

 

Chipotle Aioli

 

Ingredients 

6 tablespoons mayonnaise 

2 teaspoons chopped chipotle chiles in adobo 

2 tablespoons chopped fresh cilantro 

1 teaspoon minced garlic 

1/2 teaspoon cumin 

4 teaspoons fresh lime juice 

sea salt & freshly ground black pepper, to taste  

 

Directions

Put all ingredients in a blender and blend until smooth. Refrigerate until needed.

 

Avocado Compote

 

Ingredients

1 avocado, diced small

1/2 tomato, diced small - flesh only no seeds

1 teaspoon chopped cilantro

1/2 lime, juice

Salt and pepper to taste

 

Directions

Mix all ingredients in a bowl gently. Refrigerate until needed.
