Spatchcocked Chicken

Working time: 10 minutes. Total preparation time: about 1-1/2 hours
Serves 4

Rinse and dry chicken, tucking wings behind back. Preheat the grill to medium-hot, about 400 F degrees.

Brush chicken, both sides, with butter or oil. Season both sides with salt and pepper. Place chicken, skin-side down, onto the hot grill. Baste chicken periodically and check that the skin is not burning. If the skin is getting too dark, carefully insert a piece of aluminum foil between the chicken and the grill where burning.

Roast chicken about an hour or until a meat thermometer inserted into the thickest part of the breast reads 180 F degrees. Brush chicken again with butter or olive oil, and top with chopped fresh herbs. Serve with fresh or grilled lemon-halves. Let chicken rest 10 minutes, cut and serve.

Big Food is at it again.

Rep. Mike Pompeo (R- Kan.) and his industry lobbyist pals are pulling out all the stops today in an effort to breathe new life into the Deny Americans the Right to Know - or DARK - Act. They'll be on Capitol Hill briefing Congress in support of this bill that would block states from requiring labeling of genetically engineered ingredients and even let foods with GE ingredients be labeled "natural." We have to make sure we're louder - right now.

More than 84,000 EWG supporters have already called on their members of Congress to oppose the DARK Act. Will you join today and help us get to 100,000?

Click here to tell your representative that you deserve to know the truth about what you're eating!

EWG has been on the front lines fighting for GE food labeling laws such as the one recently passed in Vermont, and we know what it takes to win these battles: you.

Your representative needs to hear not just from industry lobbyists for companies such as Monsanto and Kraft but from the 93 percent of Americans who support labeling GE foods. Please make your voice heard today.

Click here to take action right now. Tell your representative to oppose the DARK Act!

Thank you for taking action and standing up for your basic right to know.
