Spatchcocked Chicken
Working time: 10 minutes. Total preparation time: about 1-1/2 hours Serves 4
Rinse and dry chicken, tucking wings behind back. Preheat the grill to medium-hot, about 400 F degrees.
Brush chicken, both sides, with butter or oil. Season both sides with salt and pepper. Place chicken, skin-side down, onto the hot grill. Baste chicken periodically and check that the skin is not burning. If the skin is getting too dark, carefully insert a piece of aluminum foil between the chicken and the grill where burning.
Roast chicken about an hour or until a meat thermometer inserted into the thickest part of the breast reads 180 F degrees. Brush chicken again with butter or olive oil, and top with chopped fresh herbs. Serve with fresh or grilled lemon-halves. Let chicken rest 10 minutes, cut and serve.
