Got carrots? We've been loading you up with carrots this fall, and there's more where they came from. We're quite pleased with our bumper crop of these beauties, but if you're feeling a bit overwhelmed,
- Take heart! They'll keep for a good, long time in the refrigerator; they love it cold and benefit from some humidity.
- Try Mike's Desperation Carrot Sauce. Mike is a web developer with Small Farm Central, which hosts our website. (We've never met Mike, but we have a robust phone and email relationship.) He identifies himself in this post as a "slacker chef" and offers this empty-pantry-inspired sauce made with roasted carrots and onions to put over pasta. You can meet Mike via video as he demonstrates this recipe. Mike suggests using a small can of generic condensed tomato soup, but we think that our Tomato Soup with Shallots or Whole Roasted Tomatoes might take it up a notch.
