Dear Common Thread Winter CSA Members,
Today is our 5th box with regular Tuesday pick up hours. The last pick up will be Tuesday, January 20.

This picking 0f kale was a little more affected by the cold - it is more limp than before - but will still cook up well. The brussel sprouts need a little more cleaning than that last time but you can peel bad outer layers off. We have to do a little more sorting as things have been holding over for longer in colder conditions but we're excited to have fresh veggies this time of year! Last year we lost our leeks and brussel sprouts by Thanksgiving when it got down to zero degrees but this year we covered a bed of each with hoops, remay and plastic and we're still eating them in January.
We have Chioggia beets this week - they are a specialty variety that is red on the outside and white with concentric rings of red on the inside. So pretty, and like golden beets, have a more mild flavor than the standard red beets.
I made this Coleslaw recipe this week from the Moosewood Cookbook and it went over very well. Very adaptable recipe - here was my version:
4 cups shredded cabbage
2 large carrots, grated
2 apples, grated
half a celeriac
2 Tb. balsamic or apple cider vinegar
salt and pepper to taste
1 cup plain yogurt
a spoonful of mayonnaise (optional)
1/4 cup of chopped, toasted almonds
a handful of raisins
1/4 cup finely minced red onion
they also suggest 1/4 cup unsweetened coconut, lightly toasted which I didn't have on hand but sounded nice
Combine all ingredients and mix well. Chill. Goes fast if you use a food processer with the grating attachments.
