Zucchini is solidly in right now!  My favorite, easy way to prepare zucchini (the way my dad always did it) is to cut it into rounds and steam it.  Then, when it is still hot, grate cheese (usually cheddar) over the top so it melts.  

There are a lot of great ways to prepare zucchini.  It's great in stir-fries, soups, casseroles, and it can be grated and added to baked goods.  If it's not too hot to turn the oven on, I like slicing it into long pieces, tossing it in a little oil and salt and baking it on cookie sheet until soft (which is also a great way to prepare peppers, onions, and eggplant).

Here is our all time favorite baked good with zucchini, a recipe from one of the farmers we worked for in New Hampshire years ago:
Chocolate Zucchini Cake

2 ½ cups flour

2 ½ tsp baking powder

1 tsp salt

½ cup cocoa powder

1 ½ tsp baking soda

1 tsp cinnamon (optional)

¾ cup butter

2 cups sugar

3 eggs

2 tsp vanilla

2 tsp grated orange peel (optional)

2-3 cups grated squash (depending on how moist you want it)

½ milk, buttermilk, yogurt or sour cream

optional- ½ cup nuts

½ cup chocolate chips for top

Preheat oven to 350 degrees.  Cream butter and sugar.  Add eggs.  Stir in vanilla, orange peel, zucchini and milk.  Combine dry ingredients.  Stir dry into wet until just mixed.  Stir in nuts if using.  Pour into greased 9" x 12" pan.  Sprinkle chocolate chips on top.  Bake 1 hour.    

There are a lot of nice zucchini casserole recipes, here is one that makes good use of some of the seasonings we have on the farm right now:
Zucchini-Feta Casserole 

Adapted from The Gradual Vegetarian

3 small zucchini, grated

3 eggs

6 scallions, chopped

½ cup chopped fresh dill weed

½ cup chopped parsley

½ cup grated feta cheese

½ cup grated mild cheese

½ cup flour

pinch of salt

pinch of cayenne pepper

4 Tbsp of butter

Combine first seven ingredients.  Slowly mix in flour. Season with salt and cayenne pepper. Grease a 9-inch baking pan with 1 tablespoon of the butter. Pour in zucchini mixture. Dot with remaining butter. Bake 45 minutes at 350 degrees, until lightly browned. Cut into squares.  Serve hot or cold.
