Try a new Menu Item that is gaining popularity -

Frozen Lemonade Cool-ada!
  • Clear cup and straw
  • Lemonade Slush or Granita
  • Vanilla Soft Serve
  • Whipped cream, lemon slices, mint leaves

Fill 2/3 of cup with lemonade ice, slush, or granita, fill 1/3 cup with vanilla soft serve and gently blend.  Top with whipped cream, lemon slices and/or mint leaves.

 

Get creative and use Limeade or Raspberry Lemonade flavor ice/slush/granita as well!

Cleaning & Sanitizing Granita Machines
Granita Slush Machines must be cleaned and sanitized similar to your soft serve freezers.  The manufacturer's recommendation is weekly cleaning, but your local health department rules may vary. 

*Be sure to check with your health inspector for exact compliance guidelines.


Disassemble:
  • Empty the bowls of any remaining product.
  • Turn off both main switch and mixer switch and unplug machine.
  • Disassemble the dispensing taps - remove pin to release all of the other parts.
  • Remove the bowls - raise the front part of the bowl and gently tap and push on rear part of bowl to release it.
  • Remove the spiral auger and front and back seals.
  • Remove drip trays.

Cleaning & Sanitizing:

  • Prepare your three bay sink and wash, rinse and sanitize all removed parts (except for bowl lids, do not submerge lids).  Use warm water (not hot) and no abrasive cleaning agents or cloths.
  • After final sanitizing step, allow parts to air dry.
  • With a cloth dampened with sanitizing liquid, wipe down bowl lids, and base of granita machine.  Be careful not to wet the contacts on the back of the lid.  Let lid and machine base air dry.

Reassembly:

  • Check all seals for wear, tears, or chips.  If worn, replace with new seals.
  • Lubricate and reinstall the front and back spiral auger seals.
  • Reinstall the spiral auger.
  • Set the bowls back in place. You may need to slightly raise the head of the spiral auger so that it meets the seat provided in the bowl.
  • Press bowl downward until it engages and clicks in place.
  • Reinstall the dispense taps.  Adequately lubricate the dispense cap or product may leak from tap.
  • Reinstall the drip trays.
  • Plug machine in, turn on main and mixer switches.
  • Add product, replace lids, and resume operations.

Sunday, July 17th for National Ice Cream Day.  National Hot Fudge Sundae Day is July 25th - which is a Monday, go figure?
