Change of Season

We hope you have been enjoying the abundance of spring harvest. As the solstice has just brought on the transition from spring to summer, the spring harvest is beginning to lull as the summer fruits are appearing.  Young squash are appearing between the vine and flower, and green tomatoes are hanging in clusters from the plants. The garlic scapes are being cut so the garlic bulbs can continue to ripen. We will continue to pull scallions for your shares as the bulb onions plump up in the soil.

After packing the bags to the fullest the last few weeks, they may lighten for a week or two during this seasonal transition, while we await the summer fruits to ripen.  This week will bring the summer addition of garlic scapes and basil, which make great pesto.  You could also try pureeing the garlic scapes into hummus!  We will also include more kohlrabi in this week's share.  The kohlrabi could be sliced and used to dip into pesto or hummus.  It has a nice crisp consistently and is great for dips.

Mulching the beds was much of the focus this week, as well as planting more squash, cucumber and melons.  The cucumber and melons did not germinate very well earlier in the spring, due a break in the water line, so we have been replanting to increase the number of plants in the field and hope they will come along quickly under the summer sun!

Garlic Scape and Basil Pesto

Garlic Scape Pesto

Makes about 2 cups 

 

Quarter-pound of garlic scapes (about 8), chopped
 

Half-cup of basil
 

Half-cup of parmesan cheese, grated
Quarter-cup of pine nuts
 

Teaspoon of salt
 

Teaspoon of freshly cracked pepper
 

Juice of half of a lemon (about 2 tablespoons)
 

Three-quarters of a cup of olive oil 

 

In a medium-sized pan, toast the pine nuts over medium heat until fragrant and lightly browned. Set aside. In a food processor, add the scapes, basil, cheese, pine nuts and lemon juice. Start the food processor and, as it's running, add the olive oil and process until smooth.
