Summer Recipe:Grilled Peaches with Ice Cream
I discovered a version of this recipe in a magazine about 15 years ago, and it's been a favorite ever since. August is the best time for it, thanks to the abundance of SC-grown peaches. Here's my take on this delicious seasonal dessert.
Serves 4
4 Peaches
1 Teaspoon minced ginger (more or less to taste)
1 Lime
4 Teaspoons honey
Vanilla Ice cream or gelato
Cut peaches in half and remove pits. Spread minced ginger on inside of peaches.
Place peaches, face side down, on grill. Grill 5-7 minutes or until soft/ brown around edges. Set aside.
Zest and juice lime into a bowl. Add honey and mix.
Serve peaches room temperature or warm with a scoop of vanilla ice-cream. Drizzle peaches and ice cream with lime/honey mixture.
SC Peaches are a summer staple.
