Thanksgiving in Hawaii

Long before the Pilgrims, native Hawaiians celebrated
"Makahiki,"
the longest thanksgiving in the world, which lasted four months-approximately November through February. During this time, both work and war were forbidden.

As the most important holiday of the year, Makahiki is the traditional Hawaiian celebration of the harvest and time of personal rest and spiritual and cultural renewal.

Happy Thanksgiving!

We are so thankful for all of you - our wonderful customers who have blessed us with your kindness all these years!  We appreciate your patronage and work hard everyday to share our Aloha through our food and friendly atmosphere.

(Please note, just as many of you will be observing Thanksgiving, we will be closing early on Wednesday 11/27 and will re-open on Monday December 2 to allow our staff to spend time with their families and also have some maintenance done while we're closed.)

      HOLIDAY TREATS!

As the holiday season approaches, I am reminded of the treats that mom and dad used to make for us.

Dad was  a carpenter at Grove Farm Sugar Plantation.  He also did welding, metal fabrication and machining . Occasionally, dad would do some work at the sugar mill. On those occasions he would bring home dark, sticky molasses and raw cane sugar. (Both were unrefined so no added stuff in them)  

When it was baking day our tiny kitchen would be filled with the wonderful aroma of fresh-baked molasses cookies! My job was to take the soft cookies off the cookie sheets when they came out of the oven.   

Dad used the raw cane sugar to make an awesome pineapple upside down cake. The crazy thing was that he didn't bake it - he made it on top of the stove in a heavy cast iron skillet!  I still remember how good it was!

In addition to the molasses and raw sugar, the plantation freely shared another by-product of the milling process- baggase. Baggase is the fiberous waste from the sugarcane stalks after it was ground.  Many families used it to grow mushrooms on it.   

I loved the molasses cookies and to this day, pineapple upside down cake is a favorite of mine...

Note..Baggasse is currently used to produce bio-degradeable disposable plates and take out containers as well as bio fuels. Raw sugar and molasses cost more than the refined stuff and molasses is used to make Rum. WOW did we miss something here???

RECIPE OF THE MONTH:

OLD FASHIONED MOLASSES COOKIES     
Molasses cookies are one of my favorites, and they are easier to roll out on lightly floured waxed paper with a piece of plastic wrap between the dough and the rolling pin.



Cook time:  About 10 minutes

Ingredients:

  • 1 cup sour cream
  • 5 level teaspoons baking soda
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup shortening, softened
  • 1/2 cup butter, softened
  • 2 eggs
  • 3/4 cup molasses
  • 5 1/4 to 5 1/2 cups flour
  • 1 tablespoon cinnamon
  • 1 tablespoon ginger
  • dash ground cloves, optional

Preparation:

Add soda to sour cream; set aside Cream sugars with butter and shortening. Beat in eggs and molasses. Add spices, flour, and sour cream, stirring until mixed. Chill for about 1 hour. Roll out on a floured board and cut about 1/4-inch thick with cookie cutter, thinner if you'd like crisper cookies. Sprinkle cookies with a little granulated sugar or cinnamon sugar. Bake at 350° for about 8 to 10 minutes. Makes about 5 to 6 dozen 3-inch cookies, depending on thickness.
