Vegetarian Spring Rolls
    

Ingredients

  • 2 tsp fresh ginger, minced
  • 1 cup shiitake mushrooms, finely sliced
  • 2 scallions, diced
  • 6 baby carrots, grated
  • 2 cups napa cabbage, shredded
  • 1 cup bean sprouts
  • 10 oz extra firm tofu, diced
  • 20 egg roll wrappers
  • 1 tbsp canola oil
  • Low sodium soy sauce to taste

Instructions

Heat oil in skillet and stir fry ginger and tofu until fragrant.

Add mushrooms, cabbage, carrots, scallions and bean sprouts. Stir fry for another 2-3 minutes.

Add low sodium soy sauce to taste.

Remove from heat and allow to cool.

Preheat oven to 350 F

Place wrapper on the diagonal, and place 2 tbsp filling across the middle of each wrapper.

Fold up both sides snugly against filling and moisten with a little water. Seal parcels.

Prepare baking tray with low calorie cooking spray and lay out spring rolls, spraying tops of rolls.

Bake for 20 minutes or until golden and crispy.

DAYS OF MY YOUTH  - Growing up on Kauai

 TIME TO PLANT

My grandparent's had a rice farm near the Menehune fishpond on Kauai. Around this time of the year, the family, along with a few workers spent days planting rice seedlings in the muddy water. It was back breaking work, working hunched over for hours in the hot sun, planting the seedlings one at a time.  They were truck farmers and also raised  cucumbers, corn, tomatoes, eggplants and other fruits and vegetables.

I never worked the fields, I was too little.  My time was spent playing amongst the plants in the fields.
Sometimes, I carried salt and pepper in my pocket so whenever I was hungry, all I had to do was pick whatever was ripe, add my salt and pepper and I had a great snack!

It's spring time now so we decided to start our own vegetable garden in the backyard with my grand kids.  We had a mom-approved day of getting dirty!  Little hands were busy raking, tilling and planting different varieties of tomatoes, strawberries, lettuce and carrot seeds.  They got their hands and knees dirty in the rich soil. At the end of the day, they complained about having to quit and go in for dinner.  For one day at least - we continued our family tradition of "farming".

They're anxious to see how (or if) the plants will really grow. They will also "get" their turn weeding and watering.  When it's time, I'll give them some salt and pepper packets, we'll go pick something from the garden and enjoy a snack - just like when I was a little kid.  - Myron

How time flies! It has been a year since the flooding of the farm. Ti-leaves are picking up very slowing but show improvements. Rory just planted luau leaves this past week. Weather here has not been on our side :( . We are in for more bad weather. Taking one day at a time.
