Chili Nachos
Here's a simple Super Bowl appetizer!
Time:
| Makes:4 to 6 servings
There are no rules when it comes to topping nachos; just go for what you like. Try this cheese-chili-sour cream combination.
INSTRUCTIONS
Heat the oven to 450°F and arrange a rack in the middle. Meanwhile, shred 1 pound of sharp cheddar cheese. Line a baking sheet with aluminum foil. Spread about half of a 14-ounce bag of tortilla chips on the baking sheet in an even layer. Sprinkle half of the cheese evenly over the chips. Repeat with remaining chips and cheese. Bake until the cheese is melted and bubbly, about 5 minutes. Remove from the oven and evenly top with 4 cups warm chili and 1 cup sour cream. Serve immediately.

DAYS OF MY YOUTH - Growing up on Kauai

MY FIRST BUSINESS Thinking about cold weather and being in business reminded me of the paper route I had. I remember it being pretty cold, (but not cold like here) and wet and muddy.
Papers were delivered to our house and I had to fold each one and put a rubber band around it or insert them in a plastic bag if it was rainy. I loaded the papers in a canvas bag that was attached to the handlebars of the bicycle. The heavy bag made it hard to steer the bike.
. One would think that the papers were just thrown from the bike, but no, back then, the papers were placed on the porch so it wouldn't be torn or damaged, or get lost in the plants.
I hated the houses that had dogs!
I had to collect the subscription fees at the end of the month and followed up on new referrals.
All that hard work taught me so many business practices that I've carried through life - hard work, perseverance, customer service, accounting, commitment, responsibility, following directions, sales, planning and of course - how not to get bitten by a dog!Myron

HAIKU FARMS MINUTE (Monthly update on the rebirth of our family farm on Kauai)
The weather has been absolutely cold. We started the year off right. Three of our so called "monsters" have been eliminated. We do have more! They are still getting in by digging under the fence and lifting fencing up with their noses. The ti-leaves have been progressing really slow. Hopefully when the weather starts to warm up a little, we will have a better chance. Future project up-coming will be to secure fencing. That's a long project coming up. Ted has done some clearing to a section and we are undecided at this time if we should go more ti-leaves or try some tropical flowers. More news next month. - Clarice
