We continue to receive questions about de-gassing your wine, so we thought we would offer some pointers.
- Try to de-gas when the temperature of the wine is above 70 degrees, preferably 75 degrees. Colder liquids don't release the gas as fast as warmer liquids.
- Don't over stir. When using a drill mounted stirrer, stop the drill when the vortex forms. Then allow the foam to completely die down before stirring again; otherwise, you will just be stirring the CO2 back into the wine.
- Remember, we are trying to remove most of the CO2, not all of the CO2. Some residual CO2 will improve the flavor of the wine.
- If you are not sure if the wine is de-gassed, put a sample in a glass and taste it. If you can taste the gas (a prickly sensation on your tongue), then de-gas more; otherwise, you are done.
- Filtering the wine also helps de-gas your wine. If you are constantly having problems with CO2, a filter might be your answer.
If you open a bottle of wine that has a fizz, just decant it . The decanted wine should give up its gas in 30-60 minutes.
One more point, the longer you wait to bottle the wine, the less CO2 to remove as gravity will slowly de-gas the wine for you. Just make sure that you have plenty of SO2 (sulfites) in the wine to prevent it from oxidizing.

March Madness

Besides our normal monthly sales, we have a special promotion for March. At the end of March, we will total all of your new orders placed during the month March. If the total of your new March orders exceed $225 for products, we will send you a coupon code in April for $20.00 off a future order. The total will NOT include any pre-orders or back orders from previous months, but will include any orders placed during the month, but not shipped.
The following details how this will work:
- Only new orders placed during the month will qualify for the $225.00 threshold.
- Only the cost of products will be used to determine whether you met the $225.00 threshold or not. (Shipping charges and Sales Taxes are excluded from this calculation.)
- You must be a registered user of the online system. Retail customers need to make sure the phone number in the online system matches the one you give us in the store. If you are not sure, just go to the online system and try to register with your email address. The system will then tell you if you are registered or not.
- The coupon will be treated as a gift certificate in the online system.
- Retail store customers will need to bring the coupon code with them to use the coupon in the store.
- The coupon can only be used once.
- The $20.00 gift certificate will expire on May 31st, so you will have almost 2 full months to use the coupon.
- Coupon codes will be emailed during the first week of April.

Large Equipment for Home Wine Making

We are preparing our orders for small presses, tanks and crusher/de-stemmers for large scale home winemakers. If you will be in the market this year for any of these items, you need to start thinking about placing a pre-order. You won't be charged until the items are shipped, but it would help us to know how many to order. Most of these items do require being freighted. If you would like a freight quote, send us an email or give us a call.
These items move fast across the country and sell out quickly, so don't put it off too long or you may not be able to get what you need.

Chile Fresco

It's Back!!! Mosti Mondiale's Chile Fresco is a unique product that provides home winemakers with fresh grape juice from Chile. This is Mosti Mondiale's leading product, "the best that Mother Nature has to offer " It is the Height of excellence in juice for the home winemaker!
This year, not only can you pick them up, but we will ship them to any customer within our 2 day shipping territory. The juice will arrive frozen in a 30 liter pail with the yeast already added. All you need to do is take the pail home and put it in a warm place. You will also need to open the pail by removing the lid, then laying the lid on top to protect the wine from dirt and debris.
This is one of the best products available to home wine makers and we have won a medal with every Chile Fresco we have entered into competition. My walk-up customers have already been inquiring as to when we would get this year's offerings.
I will take orders until March 31st and expect to have the juice available towards the end of May. As always, we will communicate with you as the delivery schedule is firmed up.
