Recipe of the Month: Fried Cornbread by Rick Magers
|
1. Fry a pound of sausage, careful not to over-cook...keep chopping it until you have a skillet full of chunks about the size of a common marble. Put it in a colander and let the hog fat drain off of the meat. (I use Jimmy Dean because the fat content is low.)
2. Put the sausage into a Ziploc and keep it in the freezer to use as fried cornbread OR creamed sausage over biscuits. (I make 3 pounds of cooked crumbled sausage to be available when a Confederate Soldier drops by for a visit.)
3. Make a batch of cornbread and let it age for at least 2 days.
4. Heat a skillet that you can be a bit rough with, or a Teflon one you can use a Teflon spatula in, and add a cup of water. (I prefer black iron skillets and a stainless spatula)
5. Keep scraping the bottom and turning the cornbread...DO NOT let it burn.
6. Halfway thru cooking the cornbread, add however much crumbled sausage you have thawed, and keep folding the two together. Add water and stir the mix over medium heat, and keep cooking and turning until it has consistency that you can easily remove slabs to place on a plate.
7. Put 2 over easy or sunny-side-up eggs on top.
