The Family Chef: Holiday rebounding
By Amy Fothergill

After the holidays, some of us are recovering from too much shopping or possibly alcohol. If we were to take a survey, many of us will be trying to come to grips with how much and what we ate. Last year, I kept thinking "must-go-on-a-cleanse"! As soon as the treats are out of the house and the leftovers of the stuffing, gravy and mashed potatoes are done, you might be ready.

The term "Healthy Eating" can mean different things to different people. However, if you think about food in terms of the basics, it can be really easy. If we eat a little bit of everything, we will, in fact, satisfy the requirements for a healthy diet. Some of the best places to get high quality nutrients are in fruits, veggies and whole grains. Here is some advice to help you get started. Read more and enjoy Amy's recipe for Spaghetti Squash Bolognese

Host an exchange student!

Cultural Homestay International (CHI) is looking for families willing to host high school exchange students coming from abroad to spend a year in the US. Many students have celiac disease or food allergies and most of them won't have the chance to get accepted into the program unless we find host families that understand their condition.

I am an Academic Coordinator for CHI and my job is to help high school student come to the US by finding them a family that matches their life situation. Students come from 40 different countries and have a wide array of  backgrounds. Most of them have a good knowledge of the English language, and they have been involved in many hobbies, sports, or activities in their lives. Children come with their own spending money and are trained to be a good representative of their country. They all go through a long screening process and training.

These students offer host families a good chance to learn about other cultures, and, in addition, have a little help in their home in the form of babysitting or just with light house chores. Families are only required to supply students with a bed and food. That's all! If this is an experience that interests you please contact me at (415) 359-7264 or sara_arrigoni@hotmail.com. Thank you very much! Sara Arrigoni Almaguer

Send us your favorite doctors and dietitians

We are continuing to update our
physician list  and dietitian list for Northern California. If there is a physician or dietitian who has been particularly helpful to you in diagnosing and treating celiac disease or gluten sensitivity, please send us their full name and the city in which they practice. Let us know if you have questions.

*  If it's not easy to find them online, please include their contact info

*  If you like, please tell us why you found them helpful. Your name and comments will not be published - it's just helpful to us in referring people as needed.

*  At this time, we only provide listings for medical doctors (MDs) and registered dietitians (RDs)

*  Our foundation supports evidence-based diagnostic tests and procedures. We list medical practitioners who use labs and medical practices that are used by celiac disease centers at major medical facilities.

Participate in the CeliAction research study  The CeliAction Study is a clinical research study evaluating an investigational medication for celiac disease. The study will explore whether the study medication is able to improve the damage in the lining of the intestine caused by even the smallest traces of gluten. The study will also evaluate whether the investigational medication improves any symptoms of celiac disease compared to a placebo. While enrolled in the study, you will be asked to maintain the gluten-free diet you are currently on.

The CeliAction Study is sponsored by Alvine Pharmaceuticals in San Carlos, CA. The investigational study medication is called ALV003. ALV003 is a mixture of two different enzymes, which in a test tube can break down gluten into smaller pieces of protein.

To learn more and see if you are eligible to participate, go to http://www.celiactionstudy.com/ or call 1-855-3226-ACT
