November has a lot going for it. It unofficially marks the end of Halloween, and kids can go back to eating healthy again, right? Here in our state we may not have a Thanksgiving Parade, we'll leave that to Macy's - checkout Tom the Turkey's fun facts throughout this issue. We do however have something very special in the annual Manchester Road Race held Thanksgiving morning. Seventy-eight years!

 

November is election month. It's mid-term elections. It may not have the buzz as a presidential election, but local political office is important. We encourage you to vote on Tuesday, November 4th.

 

November is a food drive month.  Please consider making a donation to your local area food bank, every bit helps. 

 

November is a time when you never know what to expect with the weather. Some days the weather is down right fantastic. Perfect autumn sunny and brisk. Other times cold and rainy. The Connecticut Energy Efficiency Fund always promotes ways to save energy. We thought we'd share their ideas this fall and winter. Here are 14 easy ways to save that can really help to reduce your energy bills. 

  1. For holiday lighting, consider using Light Emitting Diode (LED) solutions. Not only will LED lights reduce electric use by more than 90 percent, they can last up to 50,000 hours.

     
  2. Install dimmers and motion sensors where possible. Dimmer switches can increase bulb life up to 20 times longer if dimmed to half the brightness. Motion sensors give you light when you need it.

     
  3. Clean bulbs and fixtures regularly for brighter illumination.

     
  4. In the heating season, water vapors from bathing and cooking are beneficial because they help humidify the home. Dry air takes longer to heat. So use kitchen and bath exhaust fans sparingly in the winter to keep as much heat as possible inside your house. licensed plumbers ct

     
  5. Repair leaky faucets promptly. A steady drip of hot water can waste many gallons of water per month, plus the energy needed to heat the water.
     

     
  6. When installing a new hot water heater, locate it in a warm place rather than an unheated garage or basement, if possible.

  7. Keep your heating equipment well tuned with periodic maintenance by a service professional. If you do buy a new heating unit, select the most energy-efficient system within your budget. The initial cost may be high, but in the long run, your operating costs will be lower.

     
  8. When buying a new dishwasher look for the air power drying or overnight drying settings - they save energy.

     
  9. Many hot water heaters are factory-set for 140° F. That's a lot higher than you need. Reset it to 120° F

     
  10. Unplug any battery chargers or power adapters when not in use (like your cell phone charger).

     
  11. Put a lid on a pot to boil water. It boils faster and uses less energy.

     
  12. Pre-heat the oven - only when necessary. aiellohome-electrical-help

     
  13. Replace incandescent light bulbs with Energy Star compact fluorescent bulbs. They use ¼ the energy of regular light bulbs.

     
  14. Clean or replace furnace filters often. Have your furnace burner checked and cleaned annually.

     

The parade was canceled in 1942, 1943, and 1944 due to World War II.

You won't believe it until you bite into them. Vegan Gluten Free Pumpkin Chocolate Chip Muffins. Wow, that's a mouthful! Share in some family fun with these healthy treats ready to be packed into those school lunch boxes.  (Don't forget to save some for yourself) 

  

Your kids will love help make them and of course eat them.  A one size fits all muffin! Vegan, gluten-free and delicious. 

 

Vegan Gluten-Free Chocolate Chip Mini Muffins

  

Prep time: 15 mins

Cook time: 25 mins

Total time: 40 mins

  

Ingredients

  • 2 flax eggs (2 tbsp. flax meal + 4Tbsp. water ) 
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 3 Tbsp. olive oil
  • 1 tsp. vanilla extract
  • 1/2 cup unsweetened almond milk (or regular almond milk for more sweetness)
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. fine sea salt
  • 1 cup oat flour (grind gluten-free whole oats in a food processor or blender ) 
  • 1/2 cup almond meal
  • 1/2 cup mini vegan chocolate chips

Instructions

 

1. Preheat oven to 350 degrees and prepare a 24 cup mini muffin pan either with paper liners or spray lightly with a non-stick spray.


 2. Prepare the flax eggs in a large mixing bowl combining the flax meal with the water and let it stand for 5 minutes until it becomes gel-like.


 3. To that add the pumpkin puree, maple syrup, brown sugar, olive oil, vanilla and almond milk- whisk to combine.


 4. To that add the baking soda, baking powder, spices, and sea salt. Whisk it up.


 5. Add oat flour and almond meal stir with a spoon to combine


 6. Fold in chocolate chips. Careful not to over-mix!


 7. Spoon into each muffin cup to the top. Bake for 20-25 minutes or until toothpick inserted in the middle comes out clean. 


 8. Cool in pan for 10 minutes, then remove the muffins to a cooling rack. 

  

9. Eat and enjoy!

  

Notes

This is a thick batter, but if while mixing it up it seems way too thick, add a touch more almond milk. Any flour (like whole wheat pastry flour) can be substituted for the oat flour if gluten is not an issue. Fold in 1/4 cup chopped walnuts or pecans for more protein.
