Fall has made its entrance!! The leaves are turning colors of amber as they trickle off the branches outside our window. As we look forward to all of the Fall festivities, it's hard to believe that Summer is finally over. Where did it go?
We sure had an amazing Summer here at Penn Cove Shellfish!! Our mussels have been thriving in the plankton-rich waters of Penn Cove all Summer long. The continuiously warm & sunny weather has provided a perfect environment for our mussels to grow & feed upon. They are jam-packed & filled to the rim with sweet shellfish goodness!!

While it was a phenomenal Summer for our mussels, oysters on the other hand, were hard to come by. Numerous shellfish growing areas in Washington & Canada were temporarily shut down due to an escalation of a certain marine bacterias which occur naturallyin the environment, but can multiply in warm water to a level that can become dangerous to humans. Since we were blessed with warm, sunny days...a lot of areas were shut down.
As Fall arrived and the weather began to cool down, growing areas re-opened and our wet-storage facilities began to fill up with oysters. Currently, we are well-stocked in almost all of our 26+ oyster varieties!!

Mmmm.....Smoked Mussels! |
The Penn Cove Mussels brand goes back to 1975 when we started as a family business....and we are extremely excited to announce that we now carry our very own SMOKED MUSSELS!
Our smoked mussels come in two delicious flavors: Regular Smoked & Habanero Smoked. The smoked mussels are part of a sustainability effort to utilize all the mussels grown on our farm, so we are now smoking and packaging the smaller mussels & providing a new tasty treat for our shellfish fans!!
The recipes for our smoked mussels come from the famous Ekone Oyster Company in South Bend, Washington....where the mussels are smoked & packed!!!
The smoked mussels can be added to regular orders or you can purchase them on our website. They come in three different sizes: 4 oz, 8 oz, or 16 oz.

Quilcene Harvest Vessel The "Mytilus"
Our 64-foot, custom mussel harvesting vessels, the "Moule Mariner" and the "Mytilus" can be seen alongside our mussel rafts in Penn Cove and Quilcene Bay almost daily.
Each of the mussel rafts may support between 900 to 2500 mussel lines and can yield up to 50 pounds of mussels per line. The mussels take about 14 months to reach a harvestable size, so there is an ongoing rotation among the rafts between juvenile mussels and those ready to harvest, enabling year-round mussel production and optimum quality.

Now that we have lots of oysters, Rawle will be conducting
weekly oyster
evaluations & will be examing the following characteristics on each oyster:
* size
* shell streghth
* meat content
* brininess
* sweetness

Oyster of the Month
Kusshi | |
The Kusshi oyster is the "Cadillac" of all the oysters we carry. They are tray raised & consistent in size. These oysters are periodically tumbled, which breaks off new shell growth & stunts their growth, which formsa deep cup & a hard shell. This process makes the Kusshi easy to shuck. They are grown in the crisp waters of British Columbia. Their size ranges between
2"- 2.5" and is the perfect for a beginner oyster eater or any oyster aficionado. |
