How are your New Year's resolutions going so far? Are you keeping them? I admit, I rarely make them. I know myself ... I won't stick to them. I have decided instead to maintain an "everything in moderation" mentality. Self-control and willpower are great, but life without the occasional cocktail or cheeseburger simply seems ... well ... bleak. But regardless of my small transgressions, I am committed to making every year better than the last. They say that small steps yield big rewards.

Make it Stick!

We all have the best intentions when we make our resolutions for the New Year. But, as time goes by, it seems harder and harder to keep up with them. Forbes offers a few great tips on how to stick to them. To read more, click HERE.

 

  • Pick one main resolution. If you pick too many, it's easier to get defeated by such monumental goals.
  • Write it down. You can't ignore it if it's written and posted in a place where you see it all the time!
  • Set action commitments. Make yourself accountable by setting weekly or monthly goals. If your goal is to reduce spending, cancel one monthly expense that you aren't using (e.g. Sirius/XM Radio, wine club, etc.).
  • Tell a friend. Get your friends in on your goal - even email them periodically letting them know how you're doing. If someone else is following you, it motivates you more.
  • Reward yourself. The best part! Treat yourself to small rewards after finishing the small goals that lead to the larger resolution. Then, give yourself a reward for following through and completing your resolution.

Better Bites - Chicken Corn Chili

From Emilie Wernick, JAB Miami South Editor Chicken Corn Chili

This is one of my favorite go-to recipes for a healthy dinner. It makes a lot, is low-calorie (only 287 per serving), low fat (only 3 grams per serving) and is really easy to make (but don't tell my husband). All you need is a slow cooker and a few simple ingredients and you have a tasty meal!

 

Ingredients

1 large onion, chopped

1 pound boneless, skinless chicken breast

2 cups low sodium chicken broth

1 green pepper, seeded and chopped

1 jalapeno pepper, seeded and chopped

1 � tsp ground cumin

� tsp cayenne pepper

� tsp salt

1 can (14.5 oz) diced tomatoes with jalapenos, drained

1 � cups frozen corn, thawed

2 cans (15 oz each) cannellini beans, drained and rinsed

2 tablespoons stone-ground cornmeal

Shredded Monterey Jack cheese

 

Directions

In a 5- to 6-quart slow cooker, combine onion, chicken, broth, green pepper, jalapeno, 1 � tsp of the cumin, � tsp of the cayenne and � tsp of the salt. Cover and cook on high for 4 hours or low for 6 hours.

 

Shred chicken (I do it right in the slow cooker) and add remaining � tsp cumin and cayenne, and the tomatoes, corn and beans. Gently mash some of the beans against the side of the bowl to thicken the chili. Stir in the cornmeal and the remaining � tsp salt. Let sit a few minutes to soften the cornmeal. Sprinkle with a little Monterey Jack cheese (I cheat and add a few tortilla chips). Enjoy!
