I have the green light for short notes this month.  At the time of this writing we are about half way through harvest.  All of the whites are in with the exception of Seyval.  We should see that in the next week.  In the first couple of weeks of September we will bring in the Marquette and Frontenac.  We are really excited where we are going with our barrel program and it will include those two grapes.  Barrels are just plain fun.  We, again, are working on sparkling wine and the two grapes that we use for that wine are fermenting now.  
We are officially in game prep mode.  Huskers play Saturday.  In our last newsletter we laid out our official game day policy.  Again....If kick off is later than 12:00 pm we will not have a meal.  On those evenings the winery will close at 6:00.  Dan always has plenty of smoked protein at the winery.  If you are looking for a quick, easy game day meal feel free to call him at 308-940-0379.  He can get you set up with brisket, ribs, pulled pork, or pork loin.

Sept 4:  
Italian Night
We've had some requests for Fayne's amazing pasta dishes, so here you go!  She will be featuring her Sausage Lasagna & Lemon Ricotta Chicken Penne along with Prairie Creek Salad, bread, and dessert. 
 
Sept 5:  No Meal Served
When the Husker football team has an afternoon or evening kickoff, we will not serve a meal that night.  Why, you ask?  Because we've learned our lesson.  On these days, it's just us and the crickets at the winery.  Everyone else is watching the game!!!  GO BIG RED!

Sept 11:  Smoked Beef Brisket & Pork Loin
Whoo Hoo!  This one is a customer favorite!  Join us tonight for Smokin' Dan's beef brisket and pork loin meal.  Generous summer side dishes round this one out.  Linda's homemade desserts will delight as well.

Sept 18:  Boneless Beef Shortribs
 You will not not love this one.  Fayne will be serving boneless beef short ribs, savory mashed potatoes, mixed greens salad, bread, & dessert.  We'll be getting fancy and serving this one plated.

Sept 25:  Greek Night
Mark your calendars for this meal.  It's one of my personal favorite meals that Fayne prepares.  She'll be serving Greek Lemon Chicken with orzo pasta, Greek salad, pita bread, hummus, and dessert.

Round the month out with a fabulous meal.  Grab your friends and join us for Smokin' Dan's bbq ribs.  Your half rack of pecan smoked baby backs will be accompanied by generous sides. 
Smokin' Dan the Man....A History, A Story

Can I start out by saying that I LOVE to BBQ and smoke meat!
I started out BBQing in the 80's, helping out at events in Central City, mostly connected to the Pork Producers Association.  I have been a pork producer all of my life.
In the mid-90's, my wife Linda and I, along with daughter Sara and son-in-law Matt, started competing in BBQ competitions throughout the midwest.  In 2004, we won the Nebraska State BBQ Championship.  This win enabled us to compete in the Kansas City Royale in KC and the Jack Daniel's in Lynchburg, TN.  In Tennessee we competed with 42 U.S. teams and 16 international teams.  We placed in the upper 1/3 at this international competition.  In 2006, we decided to stop competing.  During my 10 years of competition cooking I had learned a lot and felt I had a great product to promote.
That year, 2006, was the year we decided to try our hand at a BBQ catering business and Nick decided to pursue a winery.
Long story short.... a building was built that encompassed both businesses, a wine production facility and a catering kitchen.
We are pleased to be providing meals at Prairie Creek.  In addition to our monthly meals at the winery, we are able to provide smoked meats for any of your special occasions.  Please call me at 308-940-0379 with any questions.  Or you can always stop and see me at the smoker.  What started as a hobby has grown to be more than I ever expected.  I thank my wife, Linda, for her help and support in growing this business.
Here I am at 69 and still Smokin'!!

Crushpad Etiquette

Harvest is in full swing.  If you see Nick working on the crushpad during your visit to the winery, don't let him see you.  He swears that things start to go wrong when people are watching.  If he sees you and approaches your group, that's a pretty good sign that things are going well and he's got a chance to talk.  =)

Husker Football Policy

It's finally getting to that time of year!!  We'd like to remind you that if the Husker Football team is kicking off anytime after 12:00 pm, we will not have a meal served that night.  If there is any doubt, feel free to check the website.  We'll keep it up to date as game times change, etc.
