Dear Fellow Bread lovers,

Hope you are getting into the groove of fall and back to school lunches.  I have made the theme this month on healthy snacks and lunch ideas complete with Whole Wheat Cheese Pretzels.  Yum.

I, also added a new feature from the Finance Man (a.k.a. my hubby Robert Sutton.)  In the times we live, there is so much uncertainty and he has calmed many a soul to ride the rough seas of the financial world.

No, this is not turning into a finance newsletter.  I am still committed to baking and cooking but am simply adding a topic for variety.  Hang tight with more baking to come...Home made English Muffins are right around the corner! :)

Whole Wheat Cheese Pretzels!
Whole Wheat Cheese Pretzels
This is a fast recipe to make a quick appetizer OR an afternoon snack for kids coming home from school; or chow down on them yourself!  Not the traditional pretzel recipe but fits the bill for FAST & EASY!

Whole Wheat Cheese Pretzels
3 cups whole wheat flour
1/2 cup shredded cheddar cheese  
4 tsp baking powder

 1 tsp raw sugar
3/4 tsp salt
4 Tbs cold butter
2/3 cup milk
1 egg beaten
Coarse salt

Step One:
Combine whole wheat flour, shredded cheddar cheese, baking powder, raw sugar, salt & butter in your Bosch Mixer with your gourmet whips.  The whips will cut the butter into the flour nicely.

Step Two:
Change from the gourmet whips to the Bosch dough hook and add milk  Knead 2 minutes.  The dough will be tacky.

Step Three:

Now, for a first for me to tell you...Flour the counter surface and your pizza roller to roll the dough out into large rectangle 8" wide. (see pic).  Cut the rectangle dough into strips and roll bread dough into 10 to 12" ropes.  Tie the rope into a pretzel knot (click here to see pic).

Step Four:
Place on grease stainless steel cookie sheet With a pastry brush, brush the pretzel dough with the beaten egg; then sprinkle with the coarse salt. Bake @ 400 degrees for about 12 minutes or until golden brown.  Best if eaten hot!

Should I Rollover My Old Retirement Plan at Work?

Recently, we moved my mom after 50 years in the same house. It was nostalgic seeing old items which were once "hi-tech," such as 35mm slides, complete with carousel, stove-top coffee maker, hand-cranked ice crusher, eight tracks, etc.  Although, we had fun walking down memory lane, it was good to get back to our iPads and smart phones!

 

Have you changed jobs and left your retirement plan with your old employer?  Do you want to be nostalgic with your second largest financial investment?  Probably not...

 

Your three options when you leave a job with a 401(k) or 403(b) plan are:

  • Cash

  • Do nothing, or

  • Move it

Cash; Taking the balance in cash is the most fun, until the IRS wants "their" money; this is usually the worst choice as penalties and income taxes take almost half your savings.  You will wish you had read the rest of this article!

Do nothing; Leaving your money in your current plan could be like 35mm slides in a carousel; once good, now very outdated!

Move it; Moving your retirement into your own IRA where YOU control the investments is usually the best choice.  However, getting funds from your old account, opening a new IRA, and putting funds into it, is not for the faint of heart.  More specifically, if proper steps are not followed, you could be assessed an early withdrawal penalty by the IRS, and pay taxes on your balance.  Not a pretty sight!  When I have issues with my car I turn to an expert.  In the same way, if you want to discuss options of moving your old retirement plan, please contact me.  I will explain the process,including all costs, and you decide what to do, all without pressure.

Snack & Lunch Ideas!!

Date & Apple Bars!

1 medium apple (finely chopped) Apple & Date Bars
1 cup chopped pitted dates
4 Tbs. water
2/3 cup butter
1/3 cup brown sugar
3 Tbs honey
3/4 cup whole wheat flour
3 cups granola
1/3 cup pine nuts
1/3 cup sliced almonds

Step One:
Heat the chopped apple & chopped dates in a sauce pan w/ water till tender.  Add butter, sugar and honey.  Heat till melted.
Step Two:
All all the other ingredients and mix thoroughly.  Press into greased 9 x 13" baking pan.
Step Three:
Bake `350 degrees for 25-30 minutes.  Cool.  When hardened cut into bars.

Note from Paula: This is a chewy granola bar to have ready for afternoon snacks or add to the kids lunch box. Better yet, eat them yourself!!! They are really good!
 
Cream Cheese Spreads!   
This is a fun way to spruce up a boring lunch by adding a bagel w/ a flavored cream cheese spread!!  Will make you feel like you are at Panera ordering specialty bagels with specialty cheese spreads.  How fun is that for lunch? :)

Walnut & Honey Cream Cheese Spread
8 oz. cream cheese
2 Tbs honey
1 tsp vanilla extract
1/8 tsp cinnamon
3 Tbs crushed walnuts
Puree in your Bosch Food Processor

Strawberry Cream Cheese Spread
8 oz. cream cheese
2 Tbs powdered sugar
1 cup hulled strawberries
Puree in your Bosch Food Processor

Onion & Chive Cream Cheese Spread
12 oz cream cheese
3/4 cup Greek Plain Yogurt
5 green onions chopped
2 tsp dried chives
1 tsp onion powder
Puree in your Bosch Food Processor

Bosch Universal Plus Mixer 

   

I do want to tell you that I actually love the grinder and mixer and so glad we have started on this bread making adventure.  I think if I didn't have that equipment, I would not been successful with making bread and would have given up.  My family loves the bread and I have peace of mind making this healthy, while delicious, choice for us. Take care and thanks again.

Tips for the Harried Woman
Charge into battle  
We really can't see with the right eyes.  I was recently reading Judges 6:10-11 where the angel of the Lord came to Gideon and called him a man of valor.  This is to the guy who is hiding while threshing his wheat because he was afraid of the enemy.  This is the guy who did obey God's first job for him, but did at night so no one would see him.  The job of knocking down the idols would not win Gideon a popularity contest! Now, if it seems I am condemning Gideon, that is far from the truth.  I would be right with him in hiding! 

My point is that God sees with different eyes and see us for who we are and can become. When the angel called Gideon valiant, I can imagine Gideon turned around looking behind him at who the angel must be talking too...which was surely not him!  Though not brave at the get go just two chapters (Judges 8) later a matter of days/weeks, Gideon is found charging after the last 15,000 formidable enemy soldiers after he has won a battle killing 120,000 formidable soldiers with only 300 men.   Gideon even tells two leaders of cities he will be back to destroy them for not helping his weary men.  This will be after he slays the 15,000!  This is the talk of a valiant man!  What changed?  God's presence and work in Gideon's life.

This can be just a nice Bible story or we can perhaps turn the tables to look at ourselves.  God see us as His creation made with a purpose to do valiant things for Him.  He is writing the story book of our lives and will do great things with little, 'ordinary' us when we let His presence and power work in our lives.
